Abstract

Patente de Invenção: "PROCESSO PARA A PREPARAçãO DE UM DOCE CONGELADO". A presente invenção se refere a um processo para o preparo de um doce congelado, cremoso, contendo gordura em que o referido preparo é realizado de acordo com as seguintes etapas: os ingredientes do doce contendo gordura são misturados juntos, a referida mistura é pasteurizada e homogeneizada ou homogeneizada e pasteurizada, a mistura homogeneizada é submetida a pelo menos duas etapas de resfriamento em que a primeira etapa corresponde a uma diminuição na temperatura da pasteurização ou temperatura de homogeneização para em torno de 10-35<198>C e a segunda etapa de 10-35<198>C para em torno de 1 a 10<198>C e um tempo de manutenção é aplicação entre ambas as etapas de resfriamento, em mistura resfriada é mantida na temperatura em torno de 1 a 10<198>C durante pelo menos 0,1 hora e a mistura resfriada é congelada com uma incorporação de ar ou outro gás antes ou durante o congelamento.
