Description
Technical field
The lactic acid product, according to the utility model, is intended for rational, prophylactic and dietary nutrition.
BACKGROUND OF THE INVENTION
(BG183Y1hBG346Y1).There are a number of rational nutrition products developed based on Bulgarian yoghurt in combination with non-dairy nutritional supplements such as concentrated fruit products, cocoa, flavors and stabilizers (BG183Y1hBG346Y1).
Lactic acid products for dietary purposes are also known, with the participation of specially selected strains of microorganisms, whose activity in combination with specific additives determines the dietary qualities of the product. In particular, BG 45410, intended for the treatment of infants up to three months of age with congenital or acquired lactose intolerance, has been developed with the participation of Lb strains. bulgaricum producing L (+) lactic acid, which is physiologically digestible by infants. BG 106427 U relates to a dietary product involving strains of Lb. delbrueckii subsp. bulgaricus, which, in combination with low-lactose milk hydrolyzate with over 95% degraded milk casein and supplements, provide the desired effect when consumed by overweight people.
The lactic acid product is known from BG 103187 A, developed with the participation of Lb strains. delbrueckii subsp. bulgaricus, registered in NBPCC under Nos 287 and 273, is intended for the prevention of mammalian carcinogenesis.
On the other hand, the qualities of pectin for optimizing the physicochemical characteristics of food products are also known (BG 27778). In parallel, it is known that the carbonyl groups of both pectin and tannin can bind to metal cations (1, 2). Heavy metals contained in natural milk are converted into Bulgarian yoghurt and, after appropriate consumption, are deposited in fats. Therefore, in order to limit the additional build-up of heavy metals in the body, healthcare institutions limit the consumption of Bulgarian yogurt to people working in environments with a high content of heavy metals, which in turn deprives them of the valuable ingredients contained in this product.
The technical nature of the utility model
The lactic acid product, according to the utility model, includes yoghurt obtained by the traditional and reservoir method and with the participation of yeast from Lactobacillus delbrueckii, subsp. bulgaricus and Streptococcus thermophilus (1: 2 ratio) pre-dissolved in water pectin mixed or not with nutritional supplements and tannin also pre-dissolved in water.
