Le fonctionnement de la machine va maintenant être expliqué.

Puis on place le fromage en entier sur le plateau 1 en le calant convenablement dans l'échancrure 12 ou 13. En- fin, on ramène la poignée 10 vers l'avant (Figure 2) en tirant for- tement, douanière que le fil 13 puisse sectionner en deux parties le fromage 11. Chacune de ces deux parties peut encore être coupée en deux autres portions, exactement de la même manière. L'effort à exercer sur la poignée 10 est moins important que celui que l'on a exercé avec un couteau ou une cisaille.
Cette machine ne comporte aucun danger pour belui qui l'utilise.
Les coupes obtenues sont absolument franches et bien planes puisque le fil 3 est guidé par la ramure 8 et par la fen te réalisée dans .le taquet 2. Les coupes de petits morceaux de fromage sans casser celui-ci ont été rendues possibles.
Enfin, l'opérateur actionne cotte machine- avec beaucoup moins de fatigue qu'avec les disposi, tifsprécédemment utilisés,
