On a fait des appareils de confection du yaourt qui comportent, autour d'un groupement de pots individuels, une enceinte isolante à double paroi, enceinte de forme quelconque.
Le prix de revient d'une telle enceinte est relativement élevé. On a songé aussi à constituer les parois d'une telle

enceinte à l'aide d'une matière pleine, fortement isolante, et le prix de ces matières est aussi élevé. Des enceintes à paroi simple, relativement très peu isolante, ont été proposées en association avec des moyens de chauffage, électriques ou autres.
Dans le brevet français n 1. 002.278 du 31 août 1946, au nom du Demandeur, on a décrit un appareil de confection de yaourt comprenant une enveloppe de forme adaptée à un ensemble de pots étroitement groupés sur un socle, en vue de ménager autour de cet ensemble un intervalle d'air sensiblement constant, l'isolement ainsi obtenu étant, de façon surprenante, satisfaisant pour le but fixé.
Dans la pratique, les pots étaient à section carrée et l'enveloppe avait obligatoirement une section prismatique, ces deux obligations entraînant des difficultés supplémentaires de fabrication, tant pour les pots que pour l'enveloppe. Les pots de section carrée, en verre ou en produits céramiques, occasionnent la mise au rebut d'une proportion supérieure des pots fabriqués par rapport aux données correspondantes dans la fabrication des pots à section circulaire. L'emboutissage d'une enveloppe à section polygonale est moins aisé que l'emboutissage ou le repoussage sur forme d'une enveloppe à section circulaire.
L'isolement remarquable obtenu par la couche d'air d'épaisseur sensiblement constante est comparable en tous points à celui qui pourrait être obtenu à l'aide d'une paroi à double cloison ou d'une paroi en matière isolante de la meilleure qualité.
Le Demandeur a constaté qu'un isolement suffisant à la fabrication rationnelle du yaourt dans des pots de consommation individuels du type habituel pouvait être conservé par des moyens plus simples et plus économiques.

surmonté par une paroi isolante, et par exemple une paroi isolante du type qui ménage au-dessus d'elle un intervalle d'air d'épaisseur sensiblement constante. Ce groupement est avantageusement supporté par une cloison isolante, par exemple, également du type qui/ménage sous elle une épaisseur d'air sensiblement constante., cette cloison inférieure pouvant avoir un isolement éventuellement moindre que celui de la cloison supérieure.
Il est avantageux, en outre, pour que l'isolement soit assuré dans des conditions plus satisfaisantes encore, que le groupement des pots soit approximativement centré par rapport aux parois isolantes, que ce centrage soit également réalisé par rapport à une paroi latérale, que le volume du groupement des pots soit en outre égal, au moins, au quart du volume de l'enceinte intérieure à ladite paroi latérale et auxdites parois isolantes et qu'enfin la hauteur dudit groupement soit de préférence plus petite que la plus réduite des dimensions transversales de ce groupement. Ces conditions peuvent être prises isolément ou diversement combinées.
C'est ainsi que dans le groupement des pots, on peut juxtaposer des pots de section circulaire ou approximativement circulaire et recouvrir ce groupement à l'aide d'une paroi dont la surface latérale laisse subsister, par rapport à la surface latérale du groupement, un intervalle d'air dont l'épaisseur est variable, sans toutefois que cette variation entraine des écarts supérieurs ou inférieurs à deux limites prédéterminées.
De telles dispositions introduisent de notables simplifications dans la construction des appareils de confec- tion de yaourt, tout en apportant également de plus grandes facilités et un agrément supplémentaire dans la confection même du produit.

La. description qui va suivre, en regard des dessins annexés à titre d'exemples non limitatifs, permettra de bien comprendre comment l'invention est mise en pratique.
La figure 1 montre schématiquement en coupe un appareil de confection de yaourt conforme à l'invention.
La figure 2 montre cet appareil vu du dessus, couver- cles enlevés.
La figure 3 montre une forme d'exécution d'une criante d'un pot de préparation du yaourt.
Comme on le voit sur la figure 1, l'appareil de préparation comporte une cuve 1 dont l'ouverture a une section rectangulaire. Le fond de cette cuve est garni à l'aide d'un plancher 2 supporté par des taquets 3, la périphérie dudit plancher s'emboîtant dans la cuve pour laisser subsister un léger jeu. De cette façon, le plancher 2 ménage avec le fond 4 de la cuve un intervalle d'air 5 d'épaisseur sensiblement constante.
Un groupe de pots de préparation de yaourt 6 est placé sur le plancher 2 et ce groupe est recouvert par une cloison amovible 7 plane qui se trouve ainsi parallèle au plancher 2.
La cloison 7 est elle-même recouverte par le couvercle 8 de la cuve 1, ce couvercle ayant un dessus plan si bien que l'inter- valle d'air 9 qui subsiste entre la cloison 7 et le dessus du couvercle 8 a une épaisseur sensiblement constante. Bien entendu. la cloison 7 s'emboîte.dans la cuve 1 comme représenté, ou dans le couvercle 8, avec peu de jeu. Un anneau 10 est prévu pour permettre le retrait de la cloison 7-
Dans l'exemple représenté, la cuve est destinée à contenir six pots sensiblement égaux de yaourt, en deux lignes de trois.

de la cuve 1. Dans le but de centrer convenablement l'ensemble des pots, on peut prévoir des reliefs 11 sous le couvercle formé par la cloison 7 ,ou sur le plancher 2. L'agencement ainsi constitué oblige les pots à demeurer jointifs et leurs parois apparentes sur le côté du groupement se trouvent à des distances qui varient entre la valeur minimum, correspondant à celle qui sépare la génératrice de chaque pot qui est la plus proche de la paroi de la cuve et ladite paroi et la valeur maximum, correspondant à celle qui sépare les génératrices de contact mutuel de deux pots et ladite paroi.
Ces deux valeurs étant comprises entre deux limites prédéterminées, l'isolement obtenu 'est excellent. La plus petite de ces deux valeurs peut corres- pondre à la valeur de l'épaisseur de la couche d'air qui permettrait un isolement satisfaisant dans le cas d'une couche d'air d'épaisseur constante. Il convient également d'opérer avec des pots de consommation individuelle du type courant, pots dont la hauteur est du même ordre de grandeur que la dimension transversale et avec un groupement de pots dont le volume total soit égal au moins au quart du volume intérieur compris entre plancher 2, couvercle 7 et paroi latérale de la cuve 1. Dans l'exemple représenté, le volume du groupement des pots est de l'ordre de grandeur de la moitié du volume qui enveloppe ledit groupement.

il est possible de placer l'appareil complet dans une armoire frigorifique à la température de +6 C seulement, sans que la confection du yaourt demande un la:5 de temps supérieur à trois heures.
Au delà de cette durée, le yaourt préparé, placé dans l'armoire frigorifique, :se rafraîchit progressivement, favorisant sa conservation et rendant sa consommation très agréable.
Comme on le voit sur la figure 3, chacun des pots 12 peut comporter un fond 13 éloigné du support constitué par le fond de la cuve 1 par une jupe 14, ménageant ainsi l'espace isolant de fond requis, mais de façon individuelle pour chaque pot. On peut également prévoir des couvercles individuels dont la juxtaposition remplace la cloison 7. La construction de l'appareil de confection du yaourt est donc très simplifiée, et ne comporte que les éléments de l'enceinte extérieure,cuve et couvercle, ou plateau et cloche, et un seul couvercle du groupement des pots, comme le couvercle formé par la cloison 7.
Les deux éléments de l'enceinte extérieure pourraient être éga Ils peuvent également être utilisés pour d'autres buts, tels que des buts culinaires, de façon séparée ou de façon associée.
Il va de soi en outre que, sans sortir du cadre de la présente invention, des modifications pourront être apportées aux formes d'exécution qui viennent d'être décrites=. Pour des groupements de pots comportant un très grand nombre d'éléments, comme c'est le cas des étuves de préparation industrielle, les conditions de centrage, de volume et de dimensions sont respectées, compte tenu du fait que l'importance thermique de l'écart entre la paroi du groupement des pots et de l'enveloppe latérale devient moindre, comme c'est le cas d'ailleurs lorsque la hauteur du

surmounted by an insulating wall, and for example an insulating wall of the type which provides above it an air gap of substantially constant thickness. This grouping is advantageously supported by an insulating partition, for example, also of the type which has a substantially constant air thickness under it, this lower partition possibly having less insulation than that of the upper partition.
It is also advantageous, so that the isolation is ensured under even more satisfactory conditions, that the grouping of the pots is approximately centered with respect to the insulating walls, that this centering is also carried out with respect to a side wall, that the volume of the grouping of pots is also equal, at least, to a quarter of the volume of the interior enclosure to said side wall and to said insulating walls and that finally the height of said group is preferably smaller than the smallest of the transverse dimensions of this group. These conditions can be taken in isolation or in various combinations.

As seen in Figure 1, the preparation apparatus comprises a tank 1 whose opening has a rectangular section. The bottom of this tank is lined with the aid of a floor 2 supported by cleats 3, the periphery of said floor fitting into the tank to leave a slight play.
