La présente invention concerne la cuisson industrielle des céréales, telles que notamment le riz, et des légumes secs.
On a déjà proposé de procéder en usine, ' à la précuisson du riz et des légumes secs, cuisson qui est suivie d'un séchage et qui permet de livrer au consommateur un produit qui, par rehy- dratation et cuisson très rapide constituant parfois un simple ré- chauffage, est immédiatement consommable. c'est ainsi qu'en ce qui concerne la riz, par exemple, on livre dans le commerce, dans divers pays, un riz dit "pré-cuit". que le consommateur n'a qu'à plonger dans plusieurs fois sa quantité d'eau, porter à l'ébulli'- tion pendant deux ou trois minutes, puis laisser reposer dans 1' eau de cuisson pendant cinq à dix minutes, pour obtenir sans diffi culté un riz cuit à point.
Il est même possible, par immersion de ce riz pré-cuit dans plusieurs fois sa quantité d'eau, et sans au- cune nouvelle cuisson, d'obtenir du riz consommable à l'état froid,

D'une façon générale, les procédé de cuisson industri- elle consistent à faire tremper à l'eau la produit à traiter pen- dant un temps plus .ou moins long, puis à le transporter directe. ment dans une enceinte dans laquelle il est cuit, soit à 1'eau, soit à la vapeur après quoi le produit cuit est,, après "démottage" éventuel, c'est-à-dire séparation au mcins partielle des grains., soumis à un séchag l'amenant au degré de siccité voulu pour son conditionnement et sa mise dans le commerce.
Une telle cuisson industrielle, et plus particulièrement celle du riz, se heurte toutefois à de sérieuses difficultés si l'on veut obtenir un rendement convenable en produit de qualité ac- ceptable. En effet, l'amidon qui se trouve au voisinage de la sur- face des grains et qui n'est que très partiellement éliminé par l'eau de trempage, donne lieu à la formation d'une colle qui a ten- dance à transformer le riz, lors de sa cuisson et de sa manutention subséquente - qui s'opère le plus souvent à l'aide de mécanismes du genre vis d'Archimède ou dans des paniers dans lesquels le riz est entassé et d'où il est déversé dans @@@ appareils de traitement ultéroeur- en une bouillie difficile à traiter par la suite,
même si cette cuisson est opérée aussi correcte.-rient que possible. D'au- tre part, le démottage ou égrenage du riz, soit immédiatement après cuisson, soit après séchage au degré voulu pour le conditnnement, donne lieu à de nombreuses brisures de grains, les grains ainsi brisés devant être éliminés et déclassés ce qui diminue considé rablement le rendement commercial de l'opération.
La présente invention a pour objet un procédé de cuisson industrielle des céréales et légumes secs, ot plus particulièrement du riz, qui permet d'éviter ces inconvénients et d'obtenir, avoc un rendement très élevé, un produit de qualités marchandes remarquables.

Ce procédé consiste fondamentalement à faire tremper à l'eau le produit à cuire, à le laisser reposer, en laissant égout- ter l'excès dieau, pendant un temps suffisamment long pour faire diffuser l'eau de trempage, de façon régulière, jusqu'au coeur du produit, à disposer le produit ainsi imprégné en une couche d'épais- seur sensiblement régulière, puis à faire passer à travers cette couche un courant de vapeur vive, pendant un temps suffisamment long pour assurer le degré de cuisson voulu, après quoi on fait passer un courant d'air dans la couche de produit cuit, sans lui faire subir aucune manipulation susceptible de la déranger, pour soumettre le produit à un séchage partiel,
jusqutà ce qu'il attei- gne un degré de siccité tel qu'il présente un état sensiblement é- lastique dans lequel il peut être manipulé sensiblement sans risque de brisure des grains, les grains du produit ayant subi ce séchage partiel étant séparés et soumis à un second séchage jusqu'au degré de siccité désiré pour le conditionnement.
Selon un premier mode de réalisation de ce procédé, le produit ayant subi un premier séchage est soumis à un traitement de séparation des grains accompagné d'une chute sensiblement ver- ticale du dit produit, qui est ensuite disposé à nouveau en une couche relativement mince qui est soumise au second séchage par tous moyens convenables et en particulier à l'aide d'un courant d'air chaud, traversant ladite couche.
Toutefois, il est préféra- ble de soumettre directement la couche de produit ayant subi le premier séchage à des ratissages successifs calculés pour assurer un brassage de plus en plus fin de la couche jusqu'à atteindre une division sans : : tement à 1'état de grains complètement séparés, tout en poursuivant le passage de l'air de séchage pendant et en- tre ces ratissages successifs jusqu'à ce que le produit traité ait atteint le degré de siccité désiré pour le conditionnement.

Dans le cas particulier du riz, la durée du trempage peut, selon la qualité du riz traité, varier entre 10 et 15 minutes et le temps de repos avec égouttage être environ de 30 minutes. La teneur en eau du riz, qui est initialement de l'ordre de 14 à 16% environ, passe alors à une valeur comprise entre 20 et 25 % Au cours du repos, l'humidité périphérique résultant du trempage dif- fuse dans tout le grain de façon régulière, les grains apparaissant cependant comme presse secs à l'extérieur. Le temps de cuisson à la vapeur varie selon l'épaisseur de la couche de grains et la qua- lité du riz traité ; se détermine facilement par l'expérience.
Pour une couche do 10 cm d'épaisseur et un riz de bonne qualité courante, ce temps est compris entre 10 et 15 minutes. Pendant la cuisson, la vapeur porte le riz et l'eau qu'il contient à la tempé- rature d'ébullition de cette dernière et ne constitue donc pratique- ment qu'un moyen de chauffage, tout en maintenant l'équilibre d'hu- midité des grains, dont la teneur en eau augmente de 3 à 5 % envi- ron. Grâce à l'absorption de l'eau par les grains au cours du re- pos avoc égouttage qui précède la cuisson, il n'y a aucune forma- tion d'empois d'amidon abondant à la surface des grains, ce qui é- vite tout collage subséquent des grains et les brisures ultérieures lors de l'égrenage de la masse.
La couche de riz cuit est alors soumise au séchage partiel abaissant relativement brusquement sa tenour en eau jusqu'à environ i8 à 20 %, le temps nécessaire à cet effet, pour la couche envisagée d'environ 10 cm d'épaisseur et avec de l'air porté à 90 C environ, étant d'environ 15 à 20 mi- nutes. En effet., avant ce premier séchage, le grain se trouve dans des conditions optima de température et d'humidité et la diffusion de l'humidité vers l'extérieur des grains est extrêmement rapide.
La cuisson par le courant de vapeur peut être opérée en faisant passer ce courant à travers la couche de produit à traiter.,

soit de bas en haut, soit de haut en has, soit successivement dans 'un sens, puis dans l'autre. Il en est da même du passage du cou- rant d'air de séchage partiel.
Pour le cas du riz tel qu'il a été envisagé ci-dessus, le séchage final peut être conduit de façon à amener la teneur en humidité desgrains à environ 10 à 12 % qui est la teneur optimum pour le condit. onnemt qui doit avoir lieu après refroidissement du riz pour éviter au maximum les brisures. Par contre, après le premier séchage partiel, la couche de riz peut être égrenée immé- diatement sans refroidissement particulier, l'état physique du riz ainsi partiellement séché étant tel qu'il ne risque pas de se bri- ser sous l'action des dispositifs d'égrenage courants. Le séchage final, s'il est opéré à l'aide d'air à 80 C environ traversant une couche d'environ 5 cm d'épaisseur, dure environ une heure.
L'air de séchage peut, dans un cas comme dans l'autre, être recyclé après réchauffage.
Il est avantageux, pour la commodité des opérations, de mettre en couche le produit à traiter dès son trempage initial.
Un appareillage pour la mise en oeuvre continue du procé- dé conforme à l'invention peut comporter des moyens pour t.remper à l'eau le produit à traiter et pour le maintenir au repos en l'é- gouttant et des moyens pour distribuer le produit en couche sensi- blement régulière sur une bande transporteuse sans fin, de préfé- rence sensiblement horizontale, en matériau résistant à la corro- sion et à la chaleur de cuisson, par exemple en acier Inoxydable, porcéo do trous ayant une dimension inférieure à celle des grains du produit à traiter, cette bande traversant successivement, de façon relativement étanche, une enceinte de cuisson et une encein- te de séchage constituées chacune par une caisse allongée munie dans ses parties inférieure et supérieure,

et d'évacuation de vapeur, pour la première, et d'air chaud, pour la seconde, les longueurs respectives de ces deux enceintes étant proportionnelles au temps de traitement du produit dans chacune d'entre elles, ladite enceinte de séchage étant suivie de moyens propres à assurer l'égrenage du produit traité et son séchage défi- nitif,
Lorsque l'on applique le premier mode de réalisation de l'invention tel ou'il a été décrit ci-dessus, la bande transporteu- se aboutit au dessus d'un dispositif d'égrenage agencé pour débiter le produit égrené sur une deuxième bande transporteuse qui traverse une enceinte de séchage définitif,
Si l'on utilise le procédé comportant des ratissages suc- cessifs avec séchage définitif simultané,
l'enceinte de séchage est prolongée de façon que sa longueur, calculée en fonction de la vitesse de déplacement de la bande transporteuse, soit telle que le produit traité présente, à sa sortie de cette enceinte', le degré de siccité désiré pour le conditionnement, et elle contient une é- rie de peignes transversaux fixes, répartis sur la longueur de 1' - l'entrée de enceinte à partir d'un point situé à une distance prédéterminé de ladite enceinte de séchage, chacun de ces peignes étant constitué par des dents verticales disposées dans un plan sensiblement trans- versal à la bande transporteuse, et agencées pour stétendre de haut en bas à travers la couche de produit à traiter, jusqu'au voisinage immédiat de la surface de la bande transporteuse,
et coopérant avec un peigne mobile constitué par des dents assujetties sur un arbre monté à rotation dans l'enceinte de séchage, et agencées pour s'en- gager entre les dents du peigne fixe correspondant en s'étendant jusqu'au voisinage de la surface de la bande transporteuse, l'écar- tement entre les dents d'un peigne fixe et du peigne mobile corres. pondant étant sensiblement le même et allant en diminuant d'un en-

semble de peignes fixe et mobile au suivant dans le sens de dépla- cement de la bande transporteuse.
Les moyens pour tremper à l'eau le produit à traiter et pour le faire reposer avec égouttage peuvent être également cons- titués par une bande transporteuse sans fin au dessus de laquelle débouche une trémie agencée pour y déverser le produit à traiter, cette bande pouvant ou non être la même que celle traversant les enceintes de cuisson et de séchage partiel ou total, et étant agen- cée pour passer obliquement en remontant dans uno cuva capable de contenir de l'eau, et pour parcourir une trajectoire oblique ascen- dante supplémentaire après avoir dépassé le niveau prévu pour l'eau dans ladite cuve, les longueurs de trajet de ladite bande au-dessous et au dessus dudit niveau étant respectivement proportionnelles aux temps désirés pour le trempage et pour le repos avec égouttage.
Lorsque la bande transporteuse de trempage et de repos est différente de celle passant dans les enceintes de cuisson et de séchage partiel, elle peut ne pas comporter de perforations, l'eau en excès entraînée par le produit s'écoulant alors le long de la bande pour retourner dans la cuve,
On a représenté, au dessin annexé, deux exemples de réa- lisation de dispositifs conformes à l'invention.

Tel qu'il est représenté à la figure 1, le dispositif comporte une bande Transporteuse sans fin 1 passant sur des rou- .eaux terminaux 2a et 2b, le rouleau 2b étant entraîné par un mo- teur, non représenté., qui assure le dépl -,ment do la bande dans le sens de la flèche f et sur des rouleaux de guidage intermédiai- res tels que 2c et 2d. Cette bande peut être constituée par une tôle flexible d'acier inoxydable perforée de trous dont le diamè- tre est de l'ordre de 1,5 à 2 mm, ou encore par une suite de pla- ques en acier inoxydable, perforée de trous de dimensions du même ordre et articulées les unes sur les autres, les rouleaux 2a et 2b étant alors des rouleaux à pans.
La bande 1 comporte une partie ,oblique, située à gauche sur la figure 1 et une partie horizonta- le, située à droite sur la figure 1.
Une fraction de la partie oblique de la bande 1, ainsi que le rouleau 2a, plongent dans une cuve 3 munie, à sa partie in- férieure, d'une conduite d'arrivée d'eau 4 et, à sa partie supé- rieure, d'une conduite de trop plein 5. Au dessus de l'extrémité de la bande 1 qui plonge dans la cuve 3 est disposée une trémie 6, munie à sa partie inférieure d'une alimentation électro-magnétique 7 do type connu, et destinée à recevoir le riz à traiter. Une pla que transversale 8 munie sur son bord inférieur d'une bavette sou- ple 9 en contact avec le brin supérieur de la bande 1, est dispo- sée dans la cuve 3 pour empêcher le riz qui tombe de la trémie 6 sur la bande 1 de s'écouler vers l'arrière.
D'autre part, des

plaques de flanc continues 10 sont disposées de bout en bout et sur chaque côté du brin supérieur de la bande !, en contact étroit avec la face supérieure de ce brin, pour maintenir le riz latérale- ment sur ce dernier.
Dans sa partie horizontale, le brin supérieur de la ban- de 1 traverse une enceinte de cuisson constituée par une sorte de boîte parallélépipédique 11 munie, à sa partie inférieure, d'une conduite d'arrivée de vapeur vive 12 aboutissant à des rampes de distribution 13 et à sa partie supérieure, d'une cheminée d'éva- cuation 14 Cett onceinte est décrite plus en détail ci-après.
Le brin supérieur de la bande 1 traverse ensuite une enceinte de pré-séchage, constituée, de façon analogue, par une boite parallé- lépipédique 15 qui est munie, à sa partie inférieure, d'une condui- te d'arrivée d'air chaud 16 ot, à sa partie supérieure, d'une che- minée d'évacuation 17.
La boite parallélépipédique constituant l'enceinte de cuisson 11 (ou l'enceinte de préséchage 15) comporte., à sa partie inférieure (Fig. 2 et 3), un bac de distribution de vapeur (ou d'- air) 11a, dans lequel sont disposées les rampes de vapeur 13 (ou dans lequel débouche la conduite d'arrivée d'air chaud 16) et, à sa partie supérieur, une hotte de réception llb d'où part la che- minée d'évacuation 14 (ou 17). Le bac 11a et la hotte llb sont as- semblés de façon étanche par des rebords latéraux, avec interposi- tion de joints 18 serrant entre eux le rebord latéral 10a de chacu- ne des plaques de flanc 10 longeant le brin supérieur de la bande 1.
Dans l'enceinte de cuisson, des canalisations 19, débouchant au fond du bac 11a et au fond des espaces ménagés entre les parois latérales de la hotte llb et les plaques de flanc 10, sont prévues pour permettrel'évacuation des condensats, A chaque extrémité l'enceinte 11 (ou 15) est fernée par une paroi transversale 20

dans laquelle est ménagée une ouverture 21 permettant le passage du brin supérieur de la bande 1 avec la couche de riz qui le surmonte, le bord supérieur de cette ouverture étant muni d'une bavette sou- ple 22 agencée pour s'appliquer légèrement sur la couche de riz transportée par la bande !, en assurant ainsi l'étanchéité néces- saire.
Les positions respectives du bac de distribution lla et de la hotte llb peuvent, dans le cas de l'enceinte de cuisson comme dans celui de l'enceinte de préséchage, être inversées, le bac se trouvant au dessus et la hotte en dessous, avec inversion corres- pondante des conduites 12 et 14 (ou 16 et 17), pour faire passer la vapeur (ou l'air) de haut en bas au lieu de bas en haut. En outre, on peut prévoir deux enceintes de cuisson (ou de préséchage) accolées bout à bout, l'une de ces enceintes recevant la vapeur (ou l'air) par en bas et l'évacuant par en haut, et l'autre la recevant par en haut et l'évacuant par en bas.
Sur la partie de la bande 1 qui passe autour du rouleau moteur 2b vient s'appliquer une plaque 23 formant raclette, qui aboutit au dessus du dispositif d'égrenage 24 constitué par une sorte de trémie le long de l'une de ses parois internes de laquelle fait saillie une bande souple horizontale 25 coopérant avec un cy- lindre rotatif 26 entraîné par un moteur à l'intérieur de la trémie et muni de baguettes en saillie 27 s'étendant suivant des génératri- ces.
De la partie inférieure de la trémie du dispositif d'égre- nage 24 part un canal 28 qui aboutit au dessus de l'une des extrémi- tés d'une seconde bande transporteuse 29 dont le brin supérieur traverse une enceinte de séchage définitif 30. Cette seconde bande et l'enceinte correspondante sont de préférence plus larges que la 1 et les enceintes 11 ou 15, pour permettre un étalement du

riz en couche plus mince. 'Un dispositif de type connu en soi et non représenté, peut être prévu pour répartir sur la largeur de la bande 29 le riz provenant du canal 28.
L'enceinte 30 peut être constituée par une boîte étanche munie d'ouvertures terminales pour le passage de la bande 29 et dans laquelle l'air chaud est amené par une conduite 31 aboutissant à des conduits distributeurs, non représentés, qui s'étendent tout le long de l'enceinte le long des parois latérales et du fond de celle-ci, tandis qu'une cheminée 32 est prévue pour l'évacuation de l'air de séchage, chargé d'humidi- té,
La couche de riz transportée par la bande 29 est recueil- lie, à l'extrémité de celle-ci et à la sortie de l'enceinte 30 par tous moyens connus, en vue de son ensachage ou de son conditionne- ment.
On peut avantageusement prévoir un circuit de recyclage de l'air chaud aussi bien dans l'enceinte 11 que dans l'enceinte 30
Les longueurs respectives des fractions immergée A-B et émergée B-C de la partie oblique de la bande 1, ainsi que la lon- gueur dos enceintes 11 et 15 sont choisies pour que, compte tenu do la vitesse de déplacement de la bande 1, le temps de séjour du riz, supposé en couche de 10 cm d'épaisseur sur la bande 1, soit de 10 à 15 minutes dans le trajet A-B, 3 0 minutes environ dans le tra- jet B-C, 10 à 15 minutes dans l'enceinte 11 et de 15 à 20 minutes environ dans l'enceinte 15.
Ces temps, constructivement constants en valeur relative, peuvent être modifiés en valeur absolue par va- riation de la vitesse de la bande 1 en fonction du temps de cuisson désiré qui constitue l'un des facteurs fondamentaux, le temps de séjour dans l'enceinte 15 pouvant être calculé assez largement du fait que l'on peut faire varier au besoin la température de l'air

qui y est introduit. Quant à la vitesse de déplacement de la ban- de 29 et à la longueur de l'enceinte 30, elles sont calculées pour assurer au riz un séjour d'une heure environ dans ladite enceinte 30.
Le riz,' placé à l'état sec et cru dans la trémite 6, est déversé de façon continue, par l'alimentation 7, sur la bande 1 préalablement mise en mouvement, sur laquelle il forme une couche d'environ 10 cm d'épaisseur) 1'alimenteur 7 étant réglé à cet ef- fet. Les plaques de flanc 10 évitent les pertes de matière sur les côtés et maintiennent l'épaisseur initiale de la couche. Le riz, entraîné au fur et à mesure par la bande 1, reste immergé dans 1'- eau pendant 10 à 15 minutes, durée du trajet A-B. Pendant le tra- jet B-C, d'une durée de 20 minutes environ, le riz s'égoutte et, comme il a été expliqué plus haut, absorbe de l'eau qui diffuse de façon régulière jusqu'au coeur de chaque grain.
Après ce temps de repos, la couche de riz oénètre dans l'enceinte 11 dans laquelle la cuisson du riz s'opère de façon continue.
Après avoir subi cette cuisson, la couche de riz, sans être dérangée en quoi que ce soit, pénètre avec la bande 1 dans l'enceinte de pré-séchage 15, dans laquelle l'air chaud est intro- duit à la température de 90 C environ. Ce séchage amène le riz au degré d'humidité optimum pour son égrenage dans le dispositif 23.
Dans ce dernier,les grains de riz, en général, légèrement agglomé- rés en mottes parfaitement friables, sont aisément et complètement séparés les uns des autres, sans brisures. Le riz ainsi égrené est finalement séché dans l'enceinte 30, puis stocké apres emballa- go éventuel.
Toutes les opérations de fabrication, c'est-à-dire trem- page, repos, cuisson et séchage sont donc réalisées mécaniquement et automatiquement par une seule machine, sans aucune intervention

de l'opérateur dont le rôle se borne aux réglages de 1'alim tion en riz, des arrivées d'eau, de vapeur et d'air ainsi qut réglage éventuel de la vitesse des bandes transporteuses 1 et 29.
L'exemple de réalisation représenté dans les figures 5 à 7, comprend, jusqu'à l'enceinte de cuisson 11 comprise, les mêmes dispositions fondamentales que l'exemple précédemment décrit, los mêmes organes étant désignés par les mêmes références. La bande transporteuse sans fin 1 est plus longue que dans l'exemple précé- dent et, à sa sortie de 1'enceinte de'cuisson 11, le brin supérieur de cette bande traverse un, enceinte 'de séchage 35 dont la consti- tution générale, en ce qui concerne notamment la construction de ses parois, de son entrée et de sa sortie, est identique à celle de l'enceinte de préséchage 15 décrite ci-dessus., l'enceinte 35 étant cependant plus longue que cette dernière.
Elle est munie, sur sa face inférieure de trois conduites 36a, 36b, 36c d'arrivée d'air chaud et, sur sa face supérieure, de trois conduites 37a, 37b, et 37c d'évacuation d'air. Los enceintes 11 et 35 sont avantageu- sement calorifugées par tous moyens convenables connus.
Transversalement dans l'enceinte 30 sont disposés six or- ganes brasseurs représentés schématiquement dans la fig. 5 et dési- gnés d'une façon générale, dans ladite figure, par la référence 38.
Chacun de ces organes comporte (fig. 6 et 7) d'une part, un peigne fixe constitué par des lames verticales 39 assujetties sur une.cor- nière horizontale 40 fixée dans la partie supérieure de l'enceinte 35, perpendiculairement à l'axe, longitudinal de cette dernière et, d'autre part, un peigne mobile constitué par des tiges parallèles 41 situées dans un même plan montées de part et d'autre sur un ar- bre 42 perpendiculairement à 1:' axe dudit arbre 42, qui est suppor- té à rotation dans des paliers 43 montés dans les parois latérales de l'enceinte 35, lesdites tiges 41 s'engageant à mi-distance entre
