<Desc/Clms Page number 2>
passage d'air.
<Desc/Clms Page number 3>

IMPROVEMENTS IN THE PRODUCTION OF ARTICLES FOR THE PREPARATION
DRINKS AND FOOD.
The present invention relates to the production of articles for the preparation of beverages or foods such as jellies or table jams, fruit juices, sweet coffee and other products containing sugar.
The process according to the invention for the manufacture of articles for the preparation of beverages or foods is characterized in that an open-sided receptacle is formed with the aid of a composition containing sugar, or an aroma is placed. in this receptacle and then the open side of the receptacle is closed using a composition containing sugar.
The invention also relates to an edible substance for the preparation of articles as indicated above, in particular of a receptacle obtained at. using a composition containing sugar, this receptacle containing an aroma,
The open-sided receptacle can be formed using "fondant", optionally containing a coloring matter, or it can be produced using a composition containing a mixture of fondant and powdered gelatin, in where, as, for example, in jellies or table jams, there is a need for gelatin in the final product.
When preparing table jellies or jams, the interior of the receptacle can be filled with powdered gelatin and a capsule containing an aroma can be placed in the gelatin mass.
The fondant ordinarily consists of a mixture of cam or beet sugar and glucose, the proportions of these two ingredients being such that the resulting mixture has physical properties which allow it to be melted and molded, so that it can be melted and molded. retains its molded shape after cooling. In addition, the mixture should be such that the flux hardens, unites easily with new amounts of flux and is impermeable to water.

air passage. The ratio of sugar to liquid glucose is preferably between 4 1/2: 1 and 8: 1, depending on the climate in which the product is to be stored.
The aroma can be a capsule containing fruit juice, an alcoholic beverage, or a concentrate, such as a coffee concentrate. It may also consist of candied fruit reduced into small pieces or of other edible material reduced into small pieces, it being understood that the edible material must not deteriorate during storage.
Generally speaking, the manufacture of the product can be carried out as follows.
Fondant is placed in an open mold from a casting machine and, while it is still in the plastic state, a mandrel is placed, this mandrel having the desired shape of the hollow to be formed in the receptacle. open side. The entire mold with the mandrel is passed under a series of rollers, so as to hold the mandrel in place until the fondant has hardened to the desired consistency. This hardening can be accelerated by passing through a cooling chamber. The: mandrel is then withdrawn, so that the receptacle with the open side is obtained, ready to be filled. The mandrel advantageously has a shape such that it is easy to remove.
When the receptacle has been filled and the contents vibrated therein, the open side is closed with a further amount of flux, which is hardened by a further cooling phase, after which the receptacle is removed from the mold.
In one embodiment of the process for obtaining an article for the preparation of a jelly or table jam, sucrose and liquid glucose, in a ratio of between 4 1/2: 1 and 8: 1, depending on the climate in which the jelly is to be stored, are heated to boiling at a temperature between 239 and 242 F, so as to form the fondant.
Before being placed in a mold, the fondant is melted at temperatures varying from 140 to 170 F and 65 to 85 gr. of fondant are then placed in the mold, after which an open-sided receptacle is formed as described above, 17 to 20 grams of gelatin and a capsule containing an aroma are placed in the open receptacle, which is then closed with a new amount of fondant in such an amount that the final product weighs between 120 and 127 grams.
When using a jelly tablet, obtained as described above, boiling water is poured onto the tablet. The water first dissolves the fondant, then the gelatin and finally the capsule containing the aroma. It is obviously necessary to agitate during this operation.
To form an article for the preparation of a fruit juice, such as an orange juice, an orange juice concentrate, additional flavoring and preserving material and coloring materials are deposited in a receptacle. next to open, which is then closed. Such a product may consist of 280 gr. of fondant, in the form of a receptacle containing 35 gr. orange concentrate, 8 grams of citric acid, small amounts of other flavoring, coloring, stabilizing and preserving substances. The product is dissolved in water to produce a concentrated or dilute liquid.
Many other products containing sugar can be obtained in a similar fashion. Thus, among these other products, mention may be made of tomato juice cakes, mint vinaigrette sauce, jelly, horseradish sauce or cream, coffee or cocoa condentrates and soup concentrates. In each case, the appropriate aroma is placed in a receptacle made of a composition containing sugar. The product is prepared for use by dissolving in water. It is possible to give the receptacle a shape suitable for the products to be prepared. A product for the preparation of orange juice can be obtained in the form of an orange, while a cocktail with tomato juice can be obtained in the form of a tomato.
In a product such as those intended for the preparation of a cocktail
<Desc / Clms Page number 3>
in tomato juice, the ratio between sugar and tomato juice must be low,
The open-sided receptacle can be obtained by methods other than that described above. Thus, a series of receptacles can be obtained by forming a series of cavities in a block of partially solidified flux. After the introduction of the aroma into the said cavities, these slabs are covered with a new quantity of fondant after which the block is cut into sections. Alternatively, a mass of molten flux is deposited in a flexible mold which, for example, has the shape of a rectangular box.
The mold has a mandrel, which has the desired shape of the hollow to be formed in the open-sided receptacle to be produced. When the filling of the mold is complete, the fondant is allowed to solidify and, after solidification, the receptacle is removed from the mold, simply by flexing the sides thereof. When it is removed from the mold, the receptacle is inverted, so that its open or hollow part is directed upwards.
The process according to the invention offers a certain number of advantages.
Thus, tablets of jelly or table jam contain gelatin, sugar and flavoring, and in a known process for the production of such tablets, the three ingredients are mixed intimately, in bulk, after which an individual tablet. is cut, from the mass and properly packed.
By this process, the aroma and gelatin are distributed throughout the mass of the tablet and it is possible that the aroma comes into contact with the ambient atmosphere, which can give rise to an evaporation of this aroma or to a detrimental change in its composition by reaction with air. In addition, mold can develop on such a jelly tablet, due to the presence of gelatin and the considerable amount of water in it.
By virtue of the process according to the invention, the loss of aroma during manufacture or by evaporation after the formation of the gel tablet or the like is substantially obviated. In addition, since the frozen tablet contains only a relatively small amount of water, it is unlikely that mold will grow on the surface of the tablet.
As for fruit juices, these are normally supplied in the form of bottled liquids. Thanks to the process according to the invention, the bulk of the liquid is eliminated and no bottle is necessary. The product for the preparation of fruit juice can be sold in the form of a tablet or the like wrapped in foil, the necessary water being added by the consumer.
