Les pellicules de métal, par contre, isolent beaucoup trop le fromage mou des influences extérieures, si bien que l'eau sortant du fromage est confinée entre l'emballage et la croûte, ce qui conduit à un étouffe- ment de la flore en question.
Le but de la présente invention est l'obtention d'un emballage pour fromage mou avec flore corticale qui permet un développement sain de cette dernière et conséquemment favorise la maturité du fromage, sans que pour cela on doive renoncer à la solidité de la forme des morceaux.
L'emballage selon la présente invention est caractérisé en ce qu'il permet l'accès de l'air à une partie de la surface du fromage. Cela peut par exemple être obtenu en faisant l'emballage, partiellement en matériel imperméable et partiellement en matière perméable à l'air. Le même effet peut âtre obtenu en prévoyant un emballage qui n'enveloppe pas complètement

Dans la fig. l, le morceau de fromage 10 est empaqueté dans une pellicule métallique qui est munie, à sa partie supérieure, de découpures en forme de bandes 16, au travers desquelles la flore corticale du fromage est en contact avec l'air ambiant.
Dans la forme d'exécution selon la fig. 2, l'em- ballage est fait au moyen d'une pellicule métallique 12 qui présente, à l'endroit où elle est en contact avec la surface supérieure du morceau de fromage, une fenêtre garnie d'un matériel 13 perméable à l'air. De cette manière aussi, l'air peut pénétrer jusqu'à la surface du fromage et faciliter le développement de la flore champinonneuse.
Dans la fig. 3, l'emballage 14 est muni de perforations 15 qui laissent libre une partie de la surface du fromage. On obtient de cette manière le même résultat que dans les figures précédentes. La grandeur des trous peut varier suivant l'effet qu'on veut obtenir.
