DESCRIPTION PRODUIT ALIMENTAIRE DU TYPE SAUCISSE OU SAUCISSON
La présente invention concerne un produit alimentaire, du type saucisse ou saucisson.
Traditionnellement, un produit alimentaire, du type saucisse ou saucisson, en particulier débitable en tranches, comprend une enveloppe externe allongée, perméable vis-à-vis de l'air ambiant, par exemple en boyau naturel ou reconstitué, d'origine animale ou végétale, ou synthétique, et un bourrage carné comportant une pâte de viande, cuite ou séchée, hachée et/ou assaisonnée.
S'agissant plus particulièrement d'un saucisson, la qualité, et notamment le goût, dépendent étroitement de la qualité de la maturation et du séchage.
La présente invention a pour objet une structure ou disposition particulière d'un produit alimentaire tel que précédemment défini, permettant d'homogénéiser et uniformiser à la fois la maturation et le séchage.
Conformément à la présente invention, un produit alimentaire, tel que défini précédemment, comprend en outre une enveloppe interne, allongée, perméable vis-à-vis de l'air ambiant, par exemple en boyau naturel ou synthétique, ménageant avec l'enveloppe externe un fourreau tubulaire contenant le bourrage carné.
Une telle structure permet en effet de maturer et sécher le bourrage carné, de manière homogène, aussi bien par l'extérieur que l'intérieur. Cette structure permet d'améliorer le goût du produit, en particulier en diminuant son acidité. Elle permet aussi d'accélérer les temps de maturation et séchage avant la mise dans le commerce ou la consommation du produit alimentaire considéré.
La présente invention est maintenant décrite par référence au dessin annexé, dans lequel : - la figure 1 représente, de manière schématique, vu en coupe, un saucisson conforme à l'invention, - la figure 2 représente, de manière schématique, en coupe, un outillage de fabrication, permettant en

particulier d'obtenir un produit alimentaire, tel que décrit ci-après par référence à la figure 1 ; cet outillage est représenté en cours de fonctionnement, lors d'une phase d'un procédé de fabrication selon l'invention.
Conformément à l'invention, un saucisson 1 comprend de manière générale : - une enveloppe externe 2a allongée, perméable vis-à-vis de l'air ambiant, par exemple en boyau, - une enveloppe interne 2b, également allongée et perméable vis-à-vis de l'air ambiant, par exemple en boyau, ménageant avec l'enveloppe externe un fourreau tubulaire 5, - un bourrage carné 3 comprenant une pâte de viande 4, hachée ou assaisonnée, contenue dans le fourreau tubulaire 5 défini précédemment.
Préférentiellement, l'enveloppe externe 2a et l'enveloppe interne 2b sont concentriques.
L'enveloppe interne 2b définit ou ménage un conduit tubulaire 6, qui est, lorsque le produit alimentaire est terminé, soit vide, soit rempli avec une fourrure alimentaire 7, différente du bourrage carné 3, par exemple une gelée.
Préférentiellement, l'enveloppe interne 2b et l'enveloppe externe 2a appartiennent à une seule et même gaine 2 fermée à ses deux extrémités longitudinales 2c et 2d, cette gaine étant perméable vis-à-vis de l'air ambiant, par exemple en boyau naturel. Cette gaine fermée 2 est plus particulièrement un élément de boyau, fermé à ses deux extrémités longitudinales 2d et 2e, par un lien 8 (par exemple une agrafe), une partie de cet élément formant l'enveloppe interne 2b étant retournée à l'intérieur d'une autre partie dudit élément, formant l'enveloppe externe 2a.
De la sorte, les deux extrémités longitudinales 2d et 2e fermées se situent, dans le produit alimentaire (saucisson) terminé de manière voisine, d'un même côté dudit saucisson, tandis que

l'autre côté du même élément de boyau présente une face frontale 2c annulaire, à profil arrondi, continue avec l'enveloppe interne 2b et l'enveloppe externe 2a.
Conformément à la figure 2, on a représenté un outillage de fabrication ou obtention du saucisson précédemment décrit. De manière générale, cet outillage comprend :

- un tube d'embossage 9, traditionnel, - un tube interne 10, disposé concentriquement, et de manière rigide, dans le tube d'embossage 9, formant avec ce dernier un conduit 11 annulaire d'extrusion, lequel communique d'un côté avec une entrée 12 pour une pâte de viande 4, et forme de l'autre côté une embouchure 13 annulaire d'extrusion, - et un mandrin 14, dont la section est adaptée pour être introduite et déplacée librement dans le tube interne 10, avec un jeu fonctionnel permettant le passage de l'enveloppe 2 sous forme tubulaire interne, décrite précédemment.
Pour fabriquer le saucisson précédemment décrit, avec l'outillage explicité par référence à la figure 2, on part tout d'abord d'un élément de boyau 2 ouvert à ses extrémités. On dispose cet élément à la manière d'une chaussette, sur le tube d'embossage 9. On ferme une extrémité 2e dudit élément de boyau, par exemple avec un lien 8 ou agrafe, du côté de l'embouchure annulaire 13 d'extrusion.
On retourne une partie 2b de l'élément de boyau, fermée à l'extrémité 2e, à l'intérieur d'une autre partie 2a du même élément de boyau, demeurant emmanchée sur le tube d'embossage 9, et ceci au moyen du mandrin 14, qui pénètre dans le tube interne 9, en demeurant séparé de ce dernier par la partie retournée 2b, qui formera dans le produit fini l'enveloppe interne 2b, puis on introduit ou extrude le bourrage carné 4 dans le conduit 11, lequel remplit le fourreau tubulaire 5, au fur et à mesure où la partie de l'élément de boyau formant l'enveloppe externe

2a se dégage et se déplace par rapport au tube d'embossage 9. De la sorte, on amène l'extrémité fermée 2e de l'élément de boyau, au voisinage de l'autre extrémité 2d de ce même élément de boyau, demeurée sur le tube d'embossage 9.
Puis, on dégage l'ensemble par rapport à l'outillage de fabrication, pour fermer ladite autre extrémité 2d, par exemple par un lien 8, et obtenir en définitive la structure ou agencement défini par référence à la figure 1.
Un saucisson, tel que décrit précédemment, peut être produit, avec ou sans fourrure intérieure, par exemple une gelée, une préparation à base de gelée, ou encore un autre produit.
