SCHNEIDEGERÄT ZUR HERSTELLUNG VON RUNDEN FRITTEN 5TICK-FRIT-CUTTER
ODER RUNDFRITTEN-SCHNEIDEGERÄT Bei der Erfindung handelt es sich um ein Schneidegerät zur Herstellung von runden Fritten, von sogenannten "Stick-Frits" oder Rundfritten. Es umfasst 2 Varianten : 1. MODELL A : Gerät zur gleichzeitigen Herstellung von runden und kleinen kantigen bzw. viereckigen Fritten (die den bekannten Streichholzfritten ähneln).
2. MODELL B : Gerät zur Herstellung von ausschliesslich runden
Fritten.
Auf dem Markt gibt es bereits diverse Kartoffel-Schneidesysteme zur Herstellung von Fritten. Es handelt sich um Roste oder Scheiben (aus Inox) mit einem Schneidegitter im Viereckformat.
Neuerdings wurde das Angebot erweitert um ein Schneidesystem für sechseckige Fritten (Schneidegitter im Sechseckformat). Letztere Erfindung zielt in erster Linie darauf ab, die in Belgien und

vielen anderen Ländern so beliebte Speisedelikatesse"PommesFrites"gesünder zu gestalten. Denn eine Fritte weist nach dem Bratvorgang des Kartoffelstäbchens im heissen Frittenfett naturgemäss einen gewissen Fettgehalt auf. Fett aber bedeutet Kalorien.
Die Ernährungswissenschaftler halten die Verbraucher allerdings immer wieder zu einer sparsamen Fett- und Kalorienaufnahme an. In diesem Sinne wurde denn auch die sechseckige Fritte geboren. Bei gleichem Volumen eines Frittenstäbchens ist die Aussenfläche erheblich kleiner. Das heisst konkret : Eine sechseckige Fritte ist flächenmässig dem Frittenfett weniger ausgesetzt als eine viereckige und deshalb logischerweise gesünder.

Wir setzen die Bemühungen um weniger Fettgehalt der "Pommes -
Frites" fort, und zwar mit der Konstruktion eines Gerätes, welches echte Rundfritten (Stick-Frits) herstellen kann,
Fritten, die also noch kalorienärmer und gesünder sind.
Mit dem Modell A unseres"Stick-Frit-Cutters"sind wir ausserdem in der Lage, eine zweifache Nutzung von ein und derselben Kar- toffel zu gewährleisten : Rundfritte und kleine Viereckfritte.
Unsere Erfindung, das Schneidegerät bzw.-system für,. runde
Fritten, stellt also die optimale Lösung zur Produktion von möglichst gesunden, sprich runden Fritten dar. Die Tatsache, dass bei beiden Modellen unseres Systems keinerlei Abfälle entstehen, macht das Gerät - neben dem gesundheitlichen Aspekt- auch wirtschaftlich sehr interessant. Es ist also die Gewähr gegeben, dass der "Stick-Frit-Cutter" wegen der Gesamtheit sei- ner Vorzüge echte Chancen hat, von der Zielkundschaft - sowohl
Hoteliers und Gastwirte sowie Betreiber von Imbisseinrichtungen als auch Privathaushalte - akzeptiert zu werden, da nur eine
100 %ige Nutzung der Kartoffel vertretbar ist.
Die Vorteile der runden Fritte liegen auf der Hand. Wir gehen von der Rundfritte mit der Grösse aus, wie sie mit unserm System hergestellt wird. Siehe dazu die Abbildung. 1a der Zeichnung 1.
Diese Rundfritte hat einen Durchmesser von 11 mm, demnach einen
Halbmesser von 5, 5 mm. Die Fläche des jeweiligen Kopfendes be- trägt folglich 94, 98 mm2. Bei einer Frittenlänge von 10 cm kom- men wir auf einen Inhalt von 9, 498 caf'. Diese Kopffläche und dieser Inhalt bilden die Norm für die Vergleiche mit den beiden anderen Frittenformen : Viereek-Fritte (Abbildung 1b) und Sechs- eckfritte (Abbildung 1c).
Wie oben angedeutet, ist bei der Gesundheits-Qualitätsbewertung der Fritten besonders eine möglichst geringe Gesamtfläche der
Aussenhaut, die mit dem Frittenfett in Kontakt kommt ausschlag- gebend.

Die Berechnung ist einfach : Die abgebildete Rundfritte (1a) mit 11 mm Durchmesser und 10 cm Länge hat einen Umfang von 34, 54 mm. Die Gesamtoberfläche des Zylinders beträgt somit 34,54 cm2 (Mantelfläche) + die Fläche der beiden Kopfenden, d.h. 2 x 94, 98 mm2 (=1,8996 mm2), ergibt 36, 4396 caf = 36,44 ci.
Wir nehmen dazu als Direktvergleich die Viereck-Fritte. Ausgehend von der Norm 9, 498 cm3 Inhalt beträgt die Länge der vier Seiten jeweils 9, 746 cm, der Umfang 38, 98 cm, die Gesamtoberfläche 40,8796 cm2 = 40,88 ci, errechnet aus 38, 98 caf (Mantelfläche) + 2 x 94, 98 tuf (die beiden Kopfflächen). Die Differenz zwischen der jeweils gleichvolumigen Rundfritte und der Viereckfritte : 40,88 cm2 - 36,44 cm2 = 4, 44 caf = 12, 18 %.
Die gleiche Operation vollziehen wir zwischen der Rundfritte und der Sechseckfritte, beide jeweils mit der oben angegebenen Norm von 9,498 cm3 Inhalt. Die Secheckfritte besteht aus sechs Seiten von jeweils 6, 049 mm, ergibt einen Umfang von 36, 29 mm und bei einer Länge von 10 cm eine Mantelfläche von 36, 29 caf. Unsere Rundfritte hat demnach 12,1 5 weniger Bratfläche als die Viereckfritte und immerhin noch 4, 8 % weniger Brat fläche als die Sechseckfritte.
Ausgehend von wissenschaftlichen Untersuchungen (durchgeführt im Rahmen der Kampagne zur Propagierung der Sechseckfritte), wonach der Fettgehalt einer Sechseckfritte, ermittelt durch die Fettrückstände an der verschieden grossen Oberfläche, etwa 10 % niedriger ist als der einer Viereckfritte, liegt der Fettgehalt einer

Rundfritte noch erheblich tiefer, womit wohl die Gesundheitsthese klar bewiesen ist.
Die Rundform der Stick-Frit beinhaltet weitere Vorteile gesundheitlicher Art : Im Gegensatz zu den Viereck- und Sechseck-Fritten können die Rundfritten aufgrund ihrer minimalen Kontaktfläche nicht zusammenkleben : Es entstehen also keine zusätzlichen Winkel, die unnötige Fettkontaktstellen bilden würden. Im Gegensatz zu den Viereck- und Sechseck-Fritten verfügen die RundFritten auch über keine Verbrennungskanten, die im Verlauf des Bratprozesses nachweisbar zu wenig gesundheitsfördernden Bräunungskanten werden.
Weniger Fettgehalt der Fritten (= Fettrückstände auf der Oberfläche) bedeutet weniger Bedarf an Frittenfett, also Kostendämpfung. Auch ergibt sich eine Zeitersparnis durch die Tatsache, dass im Gegensatz zu einer Viereck- oder einer Sechseck-Fritte bei einer Rundfritte das Garen aufgrund der Kreiskonzeption gleich- mässig von aussen nach innen erfolgen kann, da die Distanz zwischen der Oberfläche und dem Zentrum überall die gleiche ist. Der ausgeglichen gestaltete Bratprozess wirkt sich naturgemäss auch

auf die Qualität der Fritte aus.

Das Aufteilen einer Kartoffel in viereckige und sechseckige Fritten beschert wegen der genannten Form keinerlei Abfall. Die Entnahme von zylinderförmigen Stäbchen aus der Kartoffel hinterlässt dagegen Rückstände, bedingt duch die nicht erfassten Stellen zwischen den runden Schneidestäben. Von Abfall kann aber nicht die Rede sein. Die gleichzeitig mit dem Schneidprozess gewonnenen Kartoffelrückstände bieten nämlich die Grundlage für die Herstellung von schmalen viereckigen Fritten, laut dem von uns entwickelten Rundfrittenschneidegerät MODELL A (Zg. 2). Diese zweifache Nutzung der Kartoffel dürfte in allen Produktionsdimensionen überaus rentabel sein : In Grossküchen, in Hotels oder an Imbiss-ständen können dem Kunden gleichzeitig oder wahlweise Rundfritten und kleine

viereckige Stäbchenfritten angeboten werden.
Wird das Schneideverfahren genutzt für die in grossen Mengen durch Fachunternehmen konzipierte Vor-Produktion von Fritten, können ebenfalls im gleichen Arbeitsgang Rund- und kleine Viereck-Fritten - beides für die Vakuum-Verpackung (haltbar 12-18 Tage) bestimmthergestellt werden.
Eine hochinteressante VARIANTE bietet das Rundfrittenschneidegerät MODELL B. Dank der speziellen Konzeption dieses Systems, werden nur Rundfritten hergestellt, ohne dass weitere Rückstände entstehen.
Nachstehend erklären wir die technisch-mechanischen Komponenten unseres Schneidegerätes für runde Fritten. Wie schon oben angedeutet, gibt es zwei Varianten, die wir als MODELL A und MODELL B bezeichnen.
1. MODELL A (siehe Zeichnung 2) Herzstück des Systems ist die Schneideplatte (Abbildung 2a).
Sie besteht (im Gegensatz zu den üblichen Schneidegeräten, die ein Gitter mit Viereck- bzw. Sechseckelementen aufweisen) aus einem Rost mit runden, dünnwandigen und hohlen Inox-Schneidestäben (Durchmesser 11 mm, Länge 10 mm). Dieses Stab-Rost-Gefüge wird durch die Verbindung der Inox-Stäbe untereinander (im QuadratMuster) mittels Hartlötung (Silberlot) gestaltet. Neben den runden Öffnungen (1) umfasst das Gitter viereckige Zwischenräume mit reunden Seitenflächen (2).
Zweites wichtiges Bestandteil dieses Systems ist die doppelte Druckplatte (2b). Sie umfasst eine erste, untenliegende Druckplatte (2b1) mit in Quadratmuster zueinander angeordneten, je am Ende verschlossenen Druckstäben (Durchmesser 7 mm, Länge 11 mm).
Diese Druckstäbe (3) passen jeweils genau in die runden Löcher der Inox-Rohre (1) der Schneideplatte (2a) und dringen beim ersten

beim ersten Druckvorgang vollständig durch sie hindurch.
Unmittelbar über der ersten Druckplatte (2b1) ist eine zweite Druckplatte (2b2) angebracht. Ihre Druckstifte Durchm. 3 mm, Länge 19 mm (5) reichen - wie gesagt - in die speziell eingefassten Löcher (4) der unteren Druckplatte (2b1), welche sie beim zweiten Durchgang durchdringen. Dadurch gelangen sie in die Zwischenräume (2) der Schneideplatte (2a), welche sie ebenfalls vollständig durchdringen.
Die Schneideplatte (2a) und die doppelte Druckplatte (2b) sind in einem Schneidegerät (2c) integriert. Wie man sieht, ist die Schneideplatte (2a) feststehend. Mittels eines Hebel- und Führungssystems (6 und 7) wird die. Doppeldruckplatte (2b) dank eines einfachen Handgriffes auf die Schneideplatte (2a) geführt, um den Schneidevorgang auszuführen. Dabei vollzieht sich der Druckvorgang dank eines speziell hierfür vorgesehenen Doppelmechanismus in zwei Phasen : Zunächst führt die-untere Druckplatte (2b1) den Druckvorgang aus, d. h. ihre Druckstäbe (3) dringen durch die runden Locher (1) der Schneidplatte (2a) hindurch.
Anschliessend führt die über der ersten Druckplatte (2b1) angebrachte obere Druckplatte (2b2) den Druckvorgang aus, d. h. ihre Druckstäbe (5) dringen durch die Zwischenräume (2) der, Schneideplatte (2a) hindurch. Nach dem Druckvorgang wird die Doppeldruckplatte (2b) wieder in ihre Ausgangsposition gebracht.
Das Schneidegerät (2c) ist in der abgebildeten Form als Haushaltsgerät konzipiert und wird manuell bedient. Sein Konzept lässt sich aber problemlos auf ein maschinell, pneumatisch gesteuertes Schneidegerät übertragen, das für Fritten-Mengeproduktion bestimmt ist.

Wie vollzieht sich der Schneidevorgang MODELL A ? (Zeichnung 2) Wir stellen je eine Kartoffel auf die Schneideplatte (2a).
Mittels Betätigung des Hebels wird die Doppeldruckplatte (2b) auf die Kartoffel gepresst, welche somit durch die Schneideplatte (2a) durchgedrückt wird. Die Druckstäbe (3) der unteren Druckplatte (2b1) durchdringen schliesslich die Rundlöcher (1) der Inox-Rohre in der Schneideplatte vollständig, sodass die runden Kartoffelstäbchen (Durchm. 11 mm) herausfallen, und zwar in eine erste, unter das Schneidegerät (2c) gestellt Schüssel.
In der Schneideplatte (2a) bleiben Kartoffelreste in den viereckigen Zwischenräumen (2) zurück. Diese werden dann im 2. Druckvorgang - ausgelöst durch den vorhin erwähnten Doppelmechanismus- hinausgedrückt. In der Tat dringen die Druckstäbe (5) der oberen Druckplatte (2b2) durch die eingefassten Löcher (4) der unteren Druckplatte (2b1) hindurch, werden alsdann in die Zwischenräume (2) der Schneideplatte (2a) hineingeführt und drücken dort die Kartoffelreste hinaus, die dann als schmale viereckige Stäbchenfritten in eine zweite, unter das Schneidegerät (2c) gestellte Schüssel fallen.
Ohnehin würde man in diesem Fall aus praktischen Gründen einen Auffangbehälter mit 2 Fächern (für die beiden Frittenarten) vorsehen. Diese Schüssel brauchte nur unter dem Gerät hin- und hergeschoben zu werden. Sie fängt die runden und die viereckigen Fritten in den jeweiligen Behältern auf.

2. MODELL B (siehe Zeichnung 3) Dieses System stellt ausschliesslich Rundfritten her.
Bei der Schneideplatte handelt es sich um eine 10 mm dicke Inox-Scheibe (3a), worin Löcher mit jeweils 11 mm Durchmesser (8) gebohrt werden. Wie man auf der Abbildung 3a erkennt, sind die Rundlöcher im Dreieckmuster angeordnet (im Gegensatz zu Modell A, wo die Anordnung der Löcher im Viereck-Muster erfolgt).
Anschliessend werden die Löcher konisch geschliffen. Somit wird die gesamte Platte zu einem Schneidegitter, dessen besondere Merkmale die Rundlöcher (8) sowie die kegelförmigen Spitzen in den verbleibenden Zwischenräumen (9) sind.
Dazu passend wird eine Druckplatte (3b) hergestellt, mit gleichartig angeordneten Druckstäben (jeweils 7 mm Durchmesser), siehe (10).
Zwei besondere Vorteile bietet dieses System : - Es werden Rundfritten hergestellt, ohne dass dabei Abfall entsteht.
- Die entwickelte Schneideplatte und die Druckplatte können sowohl in bestehende Haushalts-Kartoffelschneidegeräte als auch in pro- fessionell betriebene Kartoffel- bzw. Frittenschneidegeräte in- tegriert werden.
Es genügt, die beiden Platten auszutauschen. Die von uns konzi- pierten Platten verfügen nämlich über einen entsprechenden
Rahmen. Die erforderliche Grösse kann jeweils bei der Herstellung angepasst werden.
Wie vollzieht sich der Schneidevorgang MODELL B ? (Zeichnung 3) Im Zuge des üblichen Druckvorgangs wird die Kartoffel durch die Schneideplatte (3a) gedrückt. Dank der Kompressionskräfte in den winzigen dreieck- bzw. spitzenförmigen Zwischenräumen (9) und der Loch-Passform (8), haben die Kartoffelstäbchen eine 100 ölige Rundform. Abfälle entstehen - wie gesagt - nicht.

OR ROUND FRITING CUTTER The invention concerns a cutting device for the production of round frits, so-called "stick frits" or round frits. It comprises 2 variants: 1. MODEL A: Device for the simultaneous production of round and small angular or square frits (which are similar to the known match frits).
2. MODEL B: Device for the production of exclusively round ones

There are already various potato cutting systems on the market for the production of fries. These are gratings or discs (made of stainless steel) with a cutting grid in a square format.
The range has recently been expanded to include a cutting system for hexagonal frits (cutting grid in hexagonal format). The latter invention aims primarily in Belgium and

"FriesFrites", a food delicacy so popular in many other countries. After all, after frying the potato sticks in hot frit fat, a frit naturally has a certain fat content. But fat means calories.
However, the nutritionists repeatedly urge consumers to consume less fat and calories. In this sense, the hexagonal frit was born. With the same volume of a fritstick, the outer surface is considerably smaller. Specifically, this means that a hexagonal frit is less exposed to frit fat in terms of area than a square frit and is therefore logically healthier.

With model A of our "Stick-Frit-Cutters" we are also able to guarantee double use of one and the same potato: round frit and small square frit.
Our invention, the cutting device or system for. round
Frits, therefore, is the optimal solution for the production of fries that are as healthy as possible, that is, round fries. The fact that there is no waste in both models of our system makes the device - in addition to the health aspect - also very interesting economically. So there is a guarantee that the "stick-frit-cutter" has real opportunities because of the totality of its advantages, from the target customers - both
Hoteliers and innkeepers as well as snack bar operators as well as private households - to be accepted as only one
100% use of the potato is acceptable.
The advantages of the round frit are obvious. We start with the round frit with the size as it is made with our system. See the illustration. 1a of drawing 1.
This round frit has a diameter of 11 mm, therefore one
Radius of 5, 5 mm. The area of the respective head end is therefore 94.98 mm 2. With a frit length of 10 cm we come to a content of 9, 498 caf '. This top surface and this content form the norm for comparisons with the other two types of frit: Viereek frit (Figure 1b) and hexagonal frit (Figure 1c).

The calculation is simple: The circular frit (1a) with a diameter of 11 mm and a length of 10 cm has a circumference of 34, 54 mm. The total surface of the cylinder is therefore 34.54 cm2 (lateral surface) + the area of the two head ends, i.e. 2 x 94, 98 mm2 (= 1.8996 mm2), results in 36, 4396 caf = 36.44 ci.
We use the square frit as a direct comparison. The difference between the round frit of equal volume and the square frit: 40.88 cm2 - 36.44 cm2 = 4.44 caf = 12.18%.
We perform the same operation between the round frit and the hexagon frit, both with the above-mentioned norm of 9.498 cm3 content. The check frit consists of six sides of 6.049 mm each, results in a circumference of 36.29 mm and with a length of 10 cm an outer surface of 36.29 caf. The total surface = 36, 29 cm2 + (2 x head area of 94, 98 mm2) =

The round shape of the stick frit has other health benefits: In contrast to the square and hexagon frits, the round frits cannot stick together due to their minimal contact area: there are no additional angles that would create unnecessary fat contact points. In contrast to the square and hexagonal frits, the round frits also have no burned edges, which demonstrably become too little health-promoting tanning edges in the course of the roasting process.
Less fat content of the frits (= fat residues on the surface) means less need for frit fat, i.e. cost reduction. A time saving also results from the fact that, in contrast to a square or a hexagon frit with a round frit, cooking can take place evenly from the outside in due to the circular design, since the distance between the surface and the center is everywhere same thing. Splitting a potato into square and hexagonal fries does not cause any waste because of the shape mentioned. The removal of cylindrical sticks from the potato, however, leaves residues due to the undetected areas between the round cutting sticks. But there can be no question of waste. The potato residues obtained at the same time as the cutting process provide the basis for the production of narrow square fries, according to the MODEL A round frit slicer we developed (Zg. 2). This double use of the potato should be extremely profitable in all production dimensions: in commercial kitchens, in hotels or at snack stands, customers can choose between round frits and small ones

square chopstick fries are offered.
If the cutting process is used for the pre-production of frits designed by specialist companies in large quantities, round and small square frits can also be produced in the same operation - both for vacuum packaging (shelf life 12-18 days).
A very interesting VARIANTE is offered by the MODEL B round frit cutter. Thanks to the special design of this system, only round frits are produced without leaving any residues.
Below we explain the technical-mechanical components of our cutting device for round frits. As indicated above, there are two variants that we call MODEL A and MODEL B.
1. MODEL A (see drawing 2) The heart of the system is the cutting plate (Figure 2a).
In contrast to the usual cutting devices, which have a grid with square or hexagonal elements, it consists of a grate with round, thin-walled and hollow stainless steel cutting bars (diameter 11 mm, length 10 mm). This rod-rust structure is created by connecting the stainless steel rods to one another (in a square pattern) using hard soldering (silver solder). In addition to the round openings (1), the grid comprises square spaces with round side surfaces (2).
The second important component of this system is the double pressure plate (2b). It comprises a first pressure plate (2b1) at the bottom with pressure rods arranged in a square pattern with respect to one another and sealed at the end (diameter 7 mm, length 11 mm).
These pressure rods (3) fit exactly into the round holes of the inox tubes (1) of the cutting plate (2a) and penetrate the first one

A second pressure plate (2b2) is attached directly above the first pressure plate (2b1). Thanks to a specially designed double mechanism, the printing process takes place in two phases: First, the lower printing plate (2b1) carries out the printing process, i. H. their push rods (3) penetrate through the round holes (1) of the cutting plate (2a).
The upper pressure plate (2b2) attached above the first pressure plate (2b1) then carries out the printing process, i. H. their push rods (5) penetrate through the spaces (2) of the cutting plate (2a). After the printing process, the double printing plate (2b) is brought back into its starting position.
The cutting device (2c) is designed as a household appliance in the form shown and is operated manually. However, its concept can easily be transferred to a machine, pneumatically controlled cutting device, which is intended for frit mass production.

How does the MODEL A cutting process take place? (Drawing 2) We each place a potato on the cutting plate (2a).
By actuating the lever, the double pressure plate (2b) is pressed onto the potato, which is thus pressed through the cutting plate (2a). The pressure bars (3) of the lower pressure plate (2b1) finally penetrate the round holes (1) of the Inox tubes in the cutting plate completely, so that the round potato sticks (11 mm in diameter) fall out, namely in a first one, under the cutting device (2c ) put bowl.
Potato remnants remain in the square plate (2a) in the square spaces (2). These are then pushed out in the second printing process - triggered by the double mechanism mentioned above. In fact, the pressure rods (5) of the upper pressure plate (2b2) penetrate through the bordered holes (4) of the lower pressure plate (2b1), are then inserted into the spaces (2) of the cutting plate (2a) and push the potato remnants out there , which then fall as narrow, square chopsticks into a second bowl placed under the cutter (2c).
In any case, for practical reasons, one would provide a collecting container with 2 compartments (for the two types of fries). This bowl only needed to be pushed back and forth under the device. It catches the round and square fries in the respective containers.

2. MODEL B (see drawing 3) This system only produces round frits.
The cutting plate is a 10 mm thick stainless steel disc (3a), in which holes with a diameter of 11 mm (8) are drilled. As can be seen in Figure 3a, the round holes are arranged in a triangular pattern (in contrast to model A, where the holes are arranged in a square pattern).
The holes are then ground conically. The entire plate thus becomes a cutting grid, the special features of which are the round holes (8) and the conical tips in the remaining spaces (9).
A pressure plate (3b) is made to match, with pressure rods arranged in the same way (each 7 mm in diameter), see (10).
This system offers two particular advantages: - Round frits are produced without waste.
- The developed cutting plate and the pressure plate can be integrated in existing household potato cutting devices as well as in professionally operated potato and frit cutting devices.
It is sufficient to replace the two plates. The plates we design have a corresponding one
Frame. The required size can be adjusted during production.
How does the MODEL B cutting process take place? (Drawing 3) In the course of the usual printing process, the potato is pressed through the cutting plate (3a). Thanks to the compression forces in the tiny triangular or pointed spaces (9) and the hole fit (8), the potato sticks have a 100 oily round shape. As I said, there is no waste.
