Hot Smoked Salmon Press. Off cut salmon pieces, over the years, have been literally wasted after the commercial quality portions have been removed and this invention has been devised to convert the off cuts into valued-added, commercially viable, alternative style of seafood. The salmon is a combination of ingredients added at set quantities at set times in the manufacturing process and placed in sausage casing before being cured in a smoke room where it is hot smoked to give it a distinctive smoked flavour. The product is then chilled and packed for three days for further curing. The salmon can then be produced in a range of styles e.g. " Sliced and vacuum packaged or tray sealed for use in salads, sandwiches canap6s, thin sliced for hang cell or left as a chubb. " Produced as sticks and served with finger foods or as a snack.

Claims (3)

1. Hot smoked salmon press is a new process for seafood.
2. Combination of ingredient, quantity cure time, mix time and when ingredient is added, cook time and post cook packaging.
