Wasserspeicherkapazität des Fleisches vennindert, was dazu führt, dass die Saftigkeit und die Struktur des Endproduktes verschlechtert wird.
Das fermentierte Molkereiprodukt kann zubereitet werden, indem ein Molkereiprodukt mit einer Startkultur geimpft wird, der pH-Wert des fermentierten Molkereiproduktes überwacht wird, und die Fennentierung des fermentierten Molkereiprodukts gestoppt wird, wenn der pH-Wert einen erwünschten Wert erreicht. Die Fermentierung des Molkereiproduktes kann durch das Abkühlen des fermentierten Molkereiprodukts auf eine Temperatur in einem Bereich von -2 bis 6 C gestoppt werden. Die Startkultur kann eine langsam arbeitende Star1kultur umfassen. Ein Vorteil der vorliegenden Erfindung ist es, dass ein gekühltes, fermentiertes Molkereiprodukt bei einer Temperatur von 0-6 C zu der Fleischemulsion hinzugefügt wird und die normale Hinzufügung von gekühltem Wasser zu den Fleischemulsionen für die Wurstherstellung vermindert werden kann oder auf diese insgesamt verzichtet werden kann. Solches gekühltes Wasser wird normalerweise hinzugefügt, um die Temperatur der Emulsion unterhalb von ungefähr 12 C während des Zerkleinems und des anschliessenden Extrudierens zu halten, und auch die Fleischemulsion zu binden, um eine Aufblähung des Produktes zu verursachen.

Produktes. Die Brühwurst der Erfindung hat einen relativ hohen Proteingehalt, enthält jedoch weniger Fett im Vergleich zu einer herkömmlichen Fleischwurst. Die fermentierten Molkereiprodukte geben dem Produkt einen besonderen Geschmack und ein besonderes Aroma.
Der pH-Wert des fermentierten Molkereiprodukts ist, wenn das Produkt der Fleischemulsion zugeführt wird, ausreichend niedrig, so dass das Molkereiprodukt den charakteristischen Geschmack und das charakteristische Aroma dieses Produkts aufweist, jedoch ist er nicht so niedrig, dass der pH-Wert der Fleisch/Milch-Produktmischung unterhalb von ungefähr pH 5, 5 liegt, so dass die Emulsion ihre wasserbindenden Eigenschaften beibehält, um sicherzustellen, dass eine Wurst hergestellt wird, die ausreichend saftig ist und gute organoleptische Qualitäten aufweist.

Buttennilch wird in bekannter Weise aus Restmilch zubereitet, welche nach dem Buttern übrig bleibt. Die Restmilch wird unter der Verwendung von Lactococcus Lactis subsp. cremoris, Lactococcus lactis subsp. lactis, Leuconostoc mesenteroides subsp. cremoris und/oder Lactrococcus lactis subsp. diacetylactic als Startkulturen angesäuert. Wenn das Ziel eines pH-Werts von 4, 8 erreicht ist, wird die Buttenni1ch einer Schockfrostung auf eine Temperatur von ungefähr-l C unterzogen. Bei dieser Temperatur wird die weitere Fermentierung der Buttermilch verhindert. Für eine solche Schockfrostung kann flüssiger Stickstoff oder ein Plattenwännetauscher verwendet werden.
In Anbetracht der Notwendigkeit der genauen Kontrolle des pH-Wertes der Buttermilch, die im Verfahren der Erfindung verwendet wird, ist es wünschenswert, dass die Buttermilch an dem gleichen Ort hergestellt wird, an dem die Herstellung der Wurst stattfindet. Man kann sich aber auch vorstellen, dass alternativ Buttermilch verwendet wird, die von einer nahen Molkerei geliefert wird.
Wie in Fig. 2 dargestellt, wird die gekühlte Buttermilch dann in zwei separate Teile geteilt. Ein erster Teil wird zum Hinzufügen in die Truthahnschenkelfleischstücke als ein grober Bestandteil 16 des Wurstmaterials 10 abgewogen. Während des Abwiegens werden zusätzliche Gewürze und/oder Zusätze zu der Bitten-milch hinzugefügt. Die Truthalnstücke werden dann mit der Buttemnilch für ungefähr zwei Stunden getumbelt.

Ein zweiter Teil der Buttennilch wird in kleinen Mengen von zerhacktem weissen und dunklen Truthahnfleisch und der Truthahnhaut, welche eine Temperatur von 0 C aufweisen, hinzugefügt.
Das zerhackte Fleisch wird fein mit der Buttennilch zerkleinert, um eine Emulsion zu bilden, und die Buttez-milch unterstützt die Aufrechterhaltung der Temperatur der Fleischemulsion unterhalb von ungefähr 12 C. Zusätzliche Gewürze oder
