Man lässt hierauf die Flüssigkeit zur klaren Abscheidung einige Zeit ruhig stehen, zieht das obenstehend alkoholische Extrakt ab, entfärbt dasselbe eventuell mit Kohle, filtriert und dampft den Alkohol, welcher hiebei fast vollständig wieder gewonnen wird, bis zur Siruplionsistenz des Rückstandes ab. Das erhaltene Rohprodukt kann von geringen Verunreinigungen durch nochmaliges Lösen in wenig lionzentriertem Alkohol'und Filtrieren gereinigt werden.
Um dasselbe in reines salzsaures Betain überzuführen, versetzt man den so erhaltenen gereinigten Auszug unter Kühlung mit Salzsäure in geringem Überschuss in gasförmiger Form oder als konzentrierte wässerige Salzsäure oder konzentrierte alkoholische Salzsäure und lässt unter Kühlung zur Kristallisation stehen. Die Kristallmasse wird abgesaugt und durch Umkristallisieren aus Alkohol in völlig reiner Form gewonnen. Desgleichen ergeben die Mutterlaugen nach entsprechender Einengung weitere Mengen Betainchlorhydrat.
Bei Anwendung von Melasse an Stelle von Melasseschlempe ist das Verfahren genau das gleiche, nur ist die Ausbeute entsprechend dem geringeren Gehalt der Melasse an Betain eine entsprechend niedrigere. Dasselbe gilt bei Anwendung von anderen Abläufen der Rübonzuckerfabrikation.
