Es sind schon Vorrichtungen bekannt, bei welchen das Formen der TeigstÜcke zu Wecken oder Knüppeln (Berliner Knüppeln) in der Weise vor sich geht, dass die flach vorgewalzten Teigstüeke mittels eines gleichzeitig als Förderorgan derselben dienenden Bandes vorzugsweise an zwei gegenüberliegenden Randteilen gegen die Mitte zu eingerollt werden. Bei den bekannten Einrichtungen dieser Art werden die Seitenkanten des das Einrollen der seitlichen Teigkanten bewirkenden, im übrigen waagrecht verlaufenden Förderbandes durch seitlich in die Bandbahn hineinragende senkrechte Profilwalzen nach innen umgebogen. Dies hat aber den Nachteil, dass das Band infolge der verschiedenen Geschwindigkeit der einzelnen Teile des Walzenprofils einer starken Reibung und demgemäss auch einem ziemlieh hohen Verschleiss unterworfen ist.
Man hat nun, um diesem Übelstand zu begegnen, versucht, die Formung der Teigstücke durch zwei nebeneinanderliegende, gekreuzte Förderbänder vorzunehmen, die entsprechend

einrollen. Diese Einrichtung hat aber wieder den Nachteil, dass durch die getrennte Anordnung zweier Bänder, z. B. durch ungleiche Haftreibung zwischen Band und Teigstück, Anlass zu Verzerrungen des letzteren gegeben erscheint oder dass das Teigstiick zu früh losgelassen wird.
Die Erfindung vermeidet die Nachteile der bekannten Einrichtungen dadurch, dass das Förder- band durch mehrere paarweise angeordnete Führungen (Rollen, feste Führungsbahnen od. dgl. ) beein- flusst wird, die lediglich durch ihre Stellung zur Bahn des Bandes das ebene Profil desselben allmählich in ein schlauchförmiges und dieses wiederineinebenes Profil überleiten, wobei das wiedereben gelegte Band- stüek einen Teil der Fertigformvorriehtung bildet bzw. die Abgabe der Teigstücke an die Fertigformvorrichtung veranlasst.
Die Zeichnung veranschaulicht ein Ausführungsbeispiel des Erfindungsgegenstandes, u. zw. zeigen die Fig. 1 und 2 eine schematische Seitenansicht bzw. Draufsieht der Einrichtung, die Fig. 3-5 Quer-

das Teigstück in den einzelnen Phasen des Verfahrens darstellen.
Die von Hand oder mittels einer Wirkmaschine vorzugsweise kugelförmig geschliffenen Teig- stücke 1 (Fig. 6) werden von der Zubringetrommel 2 einem über die Rollen 3 und 4 laufenden endlosen Band 5 zugeführt und von diesem zunächst unter eine Rolle 6 durchgezogen. Dadurch erhält das Teigstück die in Fig. 7 dargestellte flache, vorzugsweise scheibenförmige Gestalt. Die weitere Formgebung des Teigstückes wird durch das Band 5 besorgt, welchem zu diesem Zweck durch z. B. als Rollen (Walzen) 8 bzw. 9, 10 bzw. 11 ausgebildete oder durch feststehende Führungen die in den Fig. 3-5 dargestellten, allmählich ineinander übergehenden Quersehnittsformen erteilt werden. Das Teigstück selbst ist in diesen Figuren strichliert angedeutet.
Wie aus den Fig. 3-5 zu ersehen ist, besteht die Formgebung darin, dass vom scheibenförmigen Teigstück zwei gegenüberliegende Randstellen vorerst gegen die Mitte eingeschlagen (Fig. 4) und hierauf weiter eingerollt werden (Fig. 5). Will man mit der erfindungsgemässen Einrichtung sogenannte"Weckerl"erzeugen, so wird das Teigstück, welches nach Durchlauf des Bandes 5 durch die Rollen 11 die in Fig. 8 dargestellte Form aufweist, durch eine Rolle 12 der Fertigformvorriehtung breitgedrückt. Es erhält dadurch gemäss Fig. 9 die bauchige Form eines Wecken. Sollen aber mit der Einrichtung sogenannte Knüppel"erzeugt werden, so werden die Teigstücke mittels eines Laufbandes 15 vom Band 5 einem über die Rollen 16 und 17 laufenden Band 18 zugeführt.
Zwischen diesem und einer unter dem Druck einer Feder (oder eines Gewiehtes) 19 stehenden Platte 20, welche Teile ebenfalls eine

Fertigformvorrichtung bilden, werden nun die Teigstücke durchgewälzt, wodurch sie die in Fig. 10 dargestellte, zylindrische Knüppelform"erhalten. Die Walze 12 wird dabei vorzugsweise ausser Wirkung gebracht. Bei der Erzeugung von Weekerln"kann umgekehrt die eben beschriebene Walzeinriehtung ausser Wirkung gesetzt werden, was dadurch geschieht, dass man entweder das Laufband 15 oder die Platte 20 unwirksam macht.
PATENT-ANSPRÜCHE :

Vorrichtung zum Formen flach vorgewalzter Teigstücke zu Wecken oder Knüppeln (Berliner Knüppeln) durch Einrollen der Teigstücke mittels eines gleichzeitig als Förderorgan derselben dienenden Bandes, gekennzeichnet durch mehrere paarweise angeordnete Führungen (Rollen, feste Führungbahnen od. dgL), die lediglich durch ihre Stellung zur Bahn des Bandes das ebene Profil desselben allmählich in ein schlauchförmiges und dieses wieder in ein ebenes Profil überleiten, wobei das wieder eben gelegte Bandstück einen Teil der Fertigformvorrichtung bildet bzw. die Abgabe der Teigstücke an die Fertigformvorrichtung veranlasst.

The invention avoids the disadvantages of the known devices in that the conveyor belt is influenced by several guides arranged in pairs (rollers, fixed guideways or the like), which only gradually assume the flat profile of the belt through their position in relation to the path of the belt over a tubular profile and this again leveled profile, the re-laid piece of tape forming part of the ready-made device or causing the dough pieces to be transferred to the ready-made device.

The dough pieces 1 (FIG. 6), preferably ground spherically by hand or by means of a knitting machine, are fed from the feed drum 2 to an endless belt 5 running over the rollers 3 and 4 and initially pulled through under a roller 6. This gives the dough piece the flat, preferably disk-shaped shape shown in FIG. 7. The further shaping of the dough piece is taken care of by the belt 5, which for this purpose by z. B. as rollers (cylinders) 8 or 9, 10 or 11, or by means of fixed guides, the cross-sectional shapes shown in FIGS. 3-5, gradually merging into one another, are given. The dough piece itself is indicated by dashed lines in these figures.
As can be seen from FIGS. 3-5, the shape consists in that two opposite edge points of the disc-shaped dough piece are initially knocked towards the center (FIG. 4) and then rolled up further (FIG. 5). If one wants to produce so-called "pastries" with the device according to the invention, the dough piece, which after the belt 5 has passed through the rollers 11, has the shape shown in FIG. 8, is pressed wide by a roller 12 of the ready-made device. As a result, according to FIG. 9, it has the bulbous shape of a wake. However, if so-called billets are to be produced with the device, the dough pieces are fed from the belt 5 to a belt 18 running over the rollers 16 and 17 by means of a conveyor belt 15.

Device for shaping flat pre-rolled dough pieces into wake or billets (Berlin billets) by rolling up the dough pieces by means of a belt which simultaneously serves as a conveyor element of the same, characterized by several guides arranged in pairs (rollers, fixed guideways or the like), which only by their position to the path of the belt gradually convert the flat profile of the same into a hose-shaped and this again into a flat profile, wherein the again laid flat piece of tape forms part of the final forming device or causes the delivery of the dough pieces to the final forming device.
