Abstract
Composiciones de agentes de liberación para el tratamiento de envoltura de red para alimentos incluyen componentes hidrófilos (p. ej. ácidos) e hidrófobos (p. ej. modificador anfifílico tensioactivo, aceite) que potencian, en ambos casos, la capacidad para desprender un producto comestible del material de red tratado. El ácido de la composición de agente de liberación desnaturaliza proteínas a lo largo de una superficie exterior del producto comestible, formando una piel de proteínas insolubilizadas entre el material de red y el resto del producto comestible. Esta piel proteica, junto con el aceite, si está presente, y un modificador anfifílico tensioactivo del agente de liberación, inhiben la absorción y/o adsorción de las proteínas hidrófilas del producto comestible dentro o encima de la red, lo que inhibe la fijación mecánica fuerte entre la red y el producto comestible. La consiguiente liberación de la red del producto comestible es relativamente fácil, sin que se dañe el producto comestible en sí. Asimismo, se revelan artículos y métodos relacionados.
