Abstract

Se dan a conocer composiciones de agentes de liberación para el tratamiento de las mallas para alimentos, las cuales incluyen componentes hidrofílicos (por ejemplo, ácidos) e hidrofóbicos (por ejemplo, modificador anfifílico de actividad superficial, aceite), en donde ambos mejoran la liberación de un producto alimenticio a partir del material de malla tratado. El ácido de la composición del agente de liberación desnaturaliza las proteínas a lo largo de una superficie externa del artículo alimenticio, con lo que se forma una piel de proteínas insolubilizadas entre el material de malla y el resto del producto alimenticio. Esta piel proteica, junto con el aceite, si está presente, y un modificador anfifílico de actividad superficial del agente de liberación, inhiben la absorción y/o adsorción de las proteínas hidrofílicas de los alimentos a partir del producto alimenticio hacia o sobre la malla, lo que inhibe una fuerte unión mecánica entre la malla y el producto alimenticio. La liberación posterior de la malla a partir del producto alimenticio es relativamente fácil, sin dañar el producto alimenticio en sí mismo.
