Abstract

La presente se refiere a un procedimiento y un equipo para la inyección a presión de aire u otros gases de forma controlada en depósitos de vinificación o similares con el fin de proceder a la rotura eficiente del sombrero y llevar a cabo a extracción de los compuestos polifenólicos y aromáticos desde el hollejo hacia la parte líquida (mosto) después del estrujado de la uva mediante el proceso de remontado de la vendimia durante la maceración de la misma. Reivindicación 1: Procedimiento para el remontado durante la maceración de la vendimia o similares en el que se disponen los medios para la inyección a presión de aire u otros gases de forma controlada con las salidas de gases de los medios situadas a diferentes alturas o niveles de la parte inferior del depósito y dichos medios inyectan aire, al menos, de dos en dos en el depósito, incidiendo simultáneamente sobre, al menos, dos regiones del sombrero durante la actuación del sistema caracterizado porque el tiempo de inyección de los medios para la inyección a presión de aire está comprendido entre 1 - 10 segundos, el tiempo de conmutación entre los medios está comprendido entre 0,5 - 10 minutos y el tiempo de reposo de ciclo está comprendido entre 90 y 720 minutos.
