Abstract

Una cepa de Streptococcus thermophilus, en donde la cepa fermenta la galactosa, en donde la cepa lleva una mutación en la secuencia de ADN del gen glcK que codifica una proteína glucoquinasa, en donde la mutación inactiva la proteína glucoquinasa o tiene un efecto negativo sobre la expresión del gen y en donde la cepa lleva una mutación en la región promotora del gen GalK que codifica una proteína galactoquinasa.
