Abstract

Una enzima a-amilasa y su uso en la industria alimentaria, de piensos y no alimentaria. Reivindicación 1: Un polipéptido, caracterizado porque tiene actividad a-amilasa y que tiene una secuencia de polipéptidos que presenta por lo menos un 85% de identidad con los aminoácidos 18 a 495 de la SEQ ID Nº 1. Reivindicación 10: Un método para preparar una masa, caracterizado porque comprende el paso de combinar el polipéptido de acuerdo con la reivindicación 1, una composición de acuerdo con la reivindicación 7 o una premezcla de acuerdo con la reivindicación 8, y por lo menos un ingrediente de masa. Reivindicación 14: Un método para mejorar la calidad de la harina, caracterizado porque dicho método comprende agregar una cantidad eficaz de un polipéptido de acuerdo con la reivindicación 1 o una composición de acuerdo con la reivindicación 7 a una harina.
