Abstract

La presente se refiere a métodos para mantener la esterilidad de una zona de trabajo aséptica en una operación de soplado-llenado-y-sellado de manera tal que los alimentos de baja acidez pueden ser procesados asépticamente y envasados. Los métodos de la presente proveen además el mantenimiento de la esterilidad de la zona de trabajo aséptica de manera tal que la zona de trabajo aséptica no tiene que ser cerrada en un ambiente estéril separado durante el proceso de soplado-llenado-y-sellado. Los métodos de la presente además proveen un procedimiento de esterilización que son compatibles con las regulaciones de la Administración de Alimentos y Drogas de los Estados Unidos (FDA) relacionadas con el envasado aséptico de productos alimenticios de baja acidez. Adicionalmente, se describen métodos para producir un recipiente herméticamente cerrado que contiene un producto alimenticio de baja acidez.
