Abstract

Se divulga un procedimiento para la fabricacion de té de hojas. El procedimiento comprende las siguientes etapas: proporcionar un suministro de hojas de té frescas que comprende catequinas; macerar las hojas de té frescas para producir dhool; fermentar el dhool durante un primer tiempo de fermentacion suficiente para reducir el contenido de catequinas en el dhool a menos del 50% del contenido de catequinas en las hojas de té frescas antes de la maceracion en base al peso seco, antes de extraer jugo del dhool, para producir residuo de hojas y jugo de té; poner en contacto al menos parte del jugo de té con al menos parte del residuo de hojas para proporcionar una mezcla de té; y luego secar la mezcla de té para producir el té de hojas.
