Abstract

Un proceso para producir un almidon, que comprende tratar un almidon alimenticio que comprende amilopectina con glucanotransferasa para producir un almidon de cadena extendida, tratar el almidon de cadena extendida con una enzima de des-ramificacionpara producir un producto amiláceo que comprende fragmentos de amilosa, cristalizar al menos parte del producto amiláceo, calentar el producto amiláceo en la presencia de humedad, tratar el producto amiláceo con alfa-amilasa, y lavar el productoamiláceo para remover al menos parte del almidon no cristalizado, en donde el grado de polimerizacion del producto amiláceo se incrementa al incrementar el contenido de amilosa del almidon de alimentacion o se reduce reduciendo el contenido deamilosa del almidon de alimentacion. El producto de este proceso puede tener un contenido de fibra dietética total relativamente elevada, una resistencia de calor relativamente elevada, o ambas.
