Abstract
Composición que comprende un componente proteínico de suero de leche, caseína o sus mezclas y 0,05% a 5% de componente de fibra, con partículas de 1 micrón o menos y pH de 3 a 5. También comprende ácido mineral comestible y ácidos grasos como ser ácidos oleico, linoleico, ésteres no glicéricos de éstos y sus mezclas. Proceso para preparar dicha composición que comprende: a) mezclar la proteína y la fibra, o bien mezclar la fibra y agregar la proteína, para formar una primera mezcla de partículas, b) mezclar el ácido desde 4 a 43°C, para formar una segunda mezcla de partículas, en ambos casos con agitación bajo condiciones de alto efecto de corte. Son útiles como alimentos o bebidas que contienen proteínas de leche y composiciones ácidas, las que con el agregad o de cantidades nutricionalmente relevantes de fibra, resultan estables y con buenas propiedades organolépticas.
