Genes para la sintetasa del ácido graso de ciclopropano y proteínas, composiciones que los comprenden y métodos para su utilización. Formas nativas y de tipo silvestre recombinantes de la sintetasa, así como también formas mutantes y variantes, algunas de las cuales poseen características alteradas respecto de la sintetasa tipo silvestre. Métodos para utilizar genes para la sintetasa del ácido graso de ciclopropano y proteínas, incluidas en su expresión en los organismos transgénicos y en el producción de ácidos grasos de ciclopropano en los aceites vegetales, y en aceites provenientes de semillas particulares.
