Abstract

Un procedimiento de tratamiento de las frutas y verduras que comprende las siguientes etapas: (a) llevar a una temperatura de 40 a 60*C una composiciontratante líquida compuesta, en un vehículo acuoso, por la asociacion de un terpeno elegido entreel eugenol, el isoeugenol, sus sales aceptables desde el puntode vista alimenticio y sus mezclas de uno o varios compuestos elegidos entre los tocoferoles y los polifenoles. (b) aplicar dicha composicion tratante en lasfrutas y verduras porinmersion o rociado, inmersion, respectivamente rociado, que se continuan durante un tiempo inferior o igual a 10 minutos.
