Abstract

Se describe un método para reducir el contenido de grasa en un material de recubrimiento a base de grasa de confitería que tiene una viscosidad suficiente,cuando se licua, para permitir la aplicacion y retencion del material de recubrimiento sobre unsustrato subyacente de confitería. El método comprendesustituir por lo menos una porcion de por lo menos un componente que contiene grasa del material de recubrimiento con una cantidad de un triglicérido líquidode cadena media suficiente para mantener la viscosidad del material de recubrimiento.
