Abstract

Un método para preparar tiras de papas parcialmente fritas congeladas que comprenden 32% a 52% de humedad que permanecen con sabor fresco después dealmacenamiento a 0sF (-17,8sC). El método comprende pelar, trozar y recortar papas crudas en tiras,es caldar y reducir el contenido de humedad de las tiras depapas a no inferior a 54%. Freir parcialmente las tiras de papas en aceite durante un tiempo suficiente para reducir la humedad de las tiras de papas a uncontenido de humedad final de 32% a52%. De allí en adelante, las tiras de papas parcialmente fritas se congelan. Las tiras de papas parcialmente fritascongeladas tienen niveles reducidos de 2,4-dimetilpirazina y altos niveles de 2,3-decadienal. Cuando se cocinan, las papas fritas detipo francesas terminadastienen un sabor mejorado por encima de las papas horneadas en horno convencionales.
