Abstract
Se describe un procedimiento de isomerizacion de luteína a Zeaxantina, que incluye una etapa de saponificacion o tratamiento con álcali de un extractovegetal que contiene Luteína, seguida de una etapa de calentamiento bajo condicionescontrol adas se lleva a cabo en presencia de un agente tensoactivoque tiene un balance hidrofílico-lipofílico de 1 a 40 como catalizador para la reaccion de isomerizacion de luteína a zeaxantina a una temperatura de 70a 140°C, obteniéndose unproducto de reaccion con altas concentraciones de zeaxantina de hasta 80% con respecto a los carotenoides totales.
