Abstract
Se proporciona un agente leudante de fosfato hemipotásico que se obtiene combinando ortofosfato monopotásico con ácido fosfórico en cantidades molaresiguales y calentando por encima de 100°C. La mezcla caliente se coloca entonces en un recipientey se agita vigorosamente para eliminar el agua a medida quela mezcla cristaliza. El hemifosfato de potasio cristaliza eliminando todo el agua libre y produciendo un material seco granulado que se desliza fácilmente yse disuelve rápidamente con aproximadamente 0,3% de agua libre. El fosfato hemipotásico de acuerdo al proceso resulta muy útil como agente leudante enconjunción con un carbonato para la preparación de productos de panadería tales como panqueques, pasteles de ángel y otros productos de panadería queexigen agentes leudantes.
