Powdered citrus zest and stevia were added to the pureed cascara mass and thoroughly mixed with a spoon. The mass was shaped with a cookie mold and placed in dehydrator at 160° F for 12 hours. The resulting product was flaky and crunchy. A portion was sent to an analytical lab. The nutritional analysis is shown in Table 1.

  • the batter is scooped into silicone molds and placed in a dehydrator and dehydrated at 77° C (170° F) for about four hours or until a desired texture was obtained. The product needs to be monitored during the drying stage.

Abstract

L'invention concerne des produits alimentaires solides fabriqués à base de cascara de café. Les produits contiennent principalement de la cascara, un ou plusieurs édulcorants et/ou agents aromatisants, le produit alimentaire étant mou ou croquant et devant être mangé sec et mâché. La teneur en graisse des produits peut être inférieure à 3 % p/p. Les produits ont une teneur élevée en fibre et une teneur faible en glucides simples. Un produit mou a une teneur en humidité d'environ 15 % p/p, et peut contenir de la glycérine et de la gomme xanthane. Un produit croquant a une teneur en humidité inférieure à 6,0 % p/p. L'invention concerne également des procédés de préparation des produits mou et croquant.
