Description
本発明は水中油型乳化組成物に関し、かかる乳化組成物を含む飲料に関する。
カゼインなどの乳タンパク質は、高い乳化性と溶解性を併せ持つことから、コーヒーや紅茶に用いられるクリーマーの原料として広く用いられている。また、親水性が高いショ糖脂肪酸エステルと乳タンパク質を併用することで、飲料中における油滴の分散安定性が向上することが知られており、その際、ショ糖脂肪酸エステルを乳タンパク質よりも少ない量添加することで優れた効果を発揮することが知られている(例えば、特許文献1~3)。また、親水性が高いショ糖脂肪酸エステルと乳タンパク質を併用した食品も検討されている(特許文献4、5)。かかる乳タンパク質を用いた飲料、食品を乳アレルギーの人が食すると深刻な問題となるため、植物性タンパク質を用いた飲料、食品が求められている。
乳タンパク質の代替目的で、大豆タンパク質やエンドウ豆タンパク質などの植物由来タンパク質を用いることが可能である。
例えば、特許文献6、7、8には、エンドウ豆タンパク質およびショ糖脂肪酸エステル等の乳化剤を含む水中油型乳化組成物が提案されている。

しかしながら、大豆タンパク質やエンドウ豆タンパク質などの植物由来タンパク質と、ショ糖脂肪酸エステルを配合した従来の水中油型乳化組成物の技術においては、いずれも流通時の振盪により凝集や油脂分離が発生して品質が低下するという課題があった。
本発明は上記従来技術の問題点に鑑み、エンドウ豆タンパク質および/またはファバタンパク質とショ糖脂肪酸エステルを用いた場合でも、乳化状態が安定化され、より流通安定性に優れた水中油型乳化組成物およびそれを用いた飲料の提供を目的とする。

本発明者は、従来の水中油型乳化組成物の技術において、大豆タンパク質やエンドウ豆タンパク質などの植物由来タンパク質を多量に配合し、親水性の高いショ糖脂肪酸エステルを少量配合していることに着目した。大豆タンパク質にはβ-コングリシニン(分子量約150000)、グリシニン(分子量約43000)、エンドウ豆タンパク質にはコンビシリン(分子量約75000)、ビシリン(分子量約45000)などの高分子量のタンパク質が多く存在する。これらのタンパク質は、カゼイン(分子量25000)、β-ラクトグロブリン(分子量約18300)などの比較的低分子量のタンパク質を多く含有する乳タンパク質と比較して、水に分散しにくく、乳化力が弱いという欠点がある。そのため、従来の水中油型乳化組成物は凝集や油脂分離が発生しやすかったと考えられた。
本発明者は、エンドウ豆タンパク質および/またはファバタンパク質に、ショ糖脂肪酸モノエステル組成が特定少量のショ糖脂肪酸エステルを配合し、エンドウ豆タンパク質および/またはファバタンパク質とショ糖脂肪酸エステルを特定の比率で配合することにより、より高度に乳化状態が安定化され、優れた流通安定性を有する乳化組成物が得られ、上記課題を解決することができることを見出した。
本発明は、このような知見に基づいて達成されたものであり、以下を要旨とする。

本発明によれば、高度に乳化状態が安定化され、優れた流通安定性を有する水中油型乳化組成物およびそれを含む飲料を提供することができる。
また、[6]に係る態様によればより高油脂濃度の乳化組成物が得られるため、油脂あたりの輸送効率向上や水中油型乳化組成物の保管スペース削減が可能となる。
さらに、[8]および[9]に係る態様によれば、より高温での安定性が高い飲料が得られる。

以下に本発明の実施の形態を詳細に説明するが、以下に記載する構成要件の説明は、本発明の実施態様の一例(代表例)であり、本発明はこれらの内容に特定はされない。また、本明細書において「~」という表現を用いる場合、その前後の数値または物性値を含む表現として用いるものとする。
[水中油型乳化組成物]
本発明の一実施形態に係る水中油型乳化組成物は、水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルとを含む水中油型乳化組成物であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率(以下、単に「ショ糖脂肪酸モノエステル比率」と称することがある。)が全ショ糖脂肪酸エステルに対して3~45質量%であり、前記エンドウ豆タンパク質および前記ファバタンパク質の合計量1質量部に対する、前記ショ糖脂肪酸エステルの量が1~30質量部であることを特徴とする。
本発明の一実施形態に係る水中油型乳化組成物は、水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルとを含む水中油型乳化組成物であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率(以下、単に「ショ糖脂肪酸モノエステル比率」と称することがある。)が全ショ糖脂肪酸エステルに対して3~45質量%であり、前記エンドウ豆タンパク質および前記ファバタンパク質の合計量1質量部に対する、前記ショ糖脂肪酸エステルの量が1~30質量部であることを特徴とする。
<油脂>
本実施形態の水中油型乳化組成物は高油脂含量であるほど、油脂あたりの輸送効率向上や水中油型乳化組成物の保管スペース削減につながる。この観点から、上記水中油型乳化組成物の油脂含有量は25質量%以上であることが好ましく、より好ましくは31質量%以上であり、さらに好ましくは33質量%以上である。一方、本発明で用いるエンドウ豆タンパク質および/またはファバタンパク質とショ糖脂肪酸エステルによる流通時の安定性向上効果を十分に得る観点から、上記水中油型乳化組成物の油脂含有量は、50質量%以下であることが好ましく、46質量%以下であることがより好ましく、41質量%以下であることがさらに好ましく、38質量%以下であることが最も好ましい。
本実施形態の水中油型乳化組成物は高油脂含量であるほど、油脂あたりの輸送効率向上や水中油型乳化組成物の保管スペース削減につながる。この観点から、上記水中油型乳化組成物の油脂含有量は25質量%以上であることが好ましく、より好ましくは31質量%以上であり、さらに好ましくは33質量%以上である。一方、本発明で用いるエンドウ豆タンパク質および/またはファバタンパク質とショ糖脂肪酸エステルによる流通時の安定性向上効果を十分に得る観点から、上記水中油型乳化組成物の油脂含有量は、50質量%以下であることが好ましく、46質量%以下であることがより好ましく、41質量%以下であることがさらに好ましく、38質量%以下であることが最も好ましい。
従って、本実施形態の水中油型乳化組成物では、後述の油脂や乳成分等の脂質含有成分を、得られる飲料の油脂含有量が上記好適範囲内となるように配合してもよい。
なお、水中油型乳化組成物の油脂含有量は、水中油型乳化組成物に含まれる各成分中の油脂割合と当該成分の含有率から、計算により求めることができる。
油脂としては公知の油脂を用いることが可能である。例えば魚油、牛脂、豚脂、乳脂(バターや無水バター)、馬油、蛇油、卵油、卵黄油、タートル油、ミンク油などの動物性油脂類であってもよいが、乳アレルギー者用食品とする場合は植物油脂を用いることが好ましく、大豆油、とうもろこし油、綿実油、なたね油、ごま油、シソ油、こめ油、ひまわり油、落花生油、オリーブ油、パーム油、パーム核油、米胚芽油、小麦胚芽油、玄米胚芽油、ハトムギ油、ガーリックオイル、マカデミアンナッツ油、アボガド油、月見草油、サフラワー油、つばき油、ヤシ油、ひまし油、あまに油、カカオ油などの植物油脂類:およびこれらを水素添加またはエステル交換したもの、例えば、これら植物油脂の液状または固体状物を精製や脱臭、分別、硬化、エステル交換といった油脂加工した、MCT(中鎖脂肪酸油)、硬化ヤシ油、硬化パーム核油などの硬化油や加工油脂、更にこれらの油脂を分別して得られる液体油、固体脂等;中鎖脂肪酸トリグリセライド等が挙げられる。
これらのうち、アレルギー表示物質を含有しないという観点から、とうもろこし油、綿実油、なたね油、シソ油、こめ油、ひまわり油、オリーブ油、パーム油、パーム核油、米胚芽油、玄米胚芽油、ハトムギ油、ガーリックオイル、アボガド油、月見草油、サフラワー油、つばき油、ヤシ油、ひまし油、あまに油、カカオ油およびこれらを水素添加またはエステル交換したもの好ましい。さらに、水中油型乳化組成物にした際の風味または酸化劣化の観点から、パーム核油、ヤシ油およびこれらを水素添加またはエステル交換したものが好ましく、パーム核油、ヤシ油を水素添加した硬化パーム核油、硬化ヤシ油が最も好ましい。
本実施形態の水中油型乳化組成物には、これらの油脂の1種のみが含まれていてもよく、2種以上が含まれていてもよい。

本実施形態の水中油型乳化組成物において、このような油脂は、他の脂質含有成分、例えば後述の乳・豆乳成分等に含まれる脂質との合計で、水中油型乳化組成物および飲料中の油脂含有量が前述の好適範囲内となるように用いられる。
なかでも植物油脂を用いる場合は、飲料として飲用した際に軽い飲み口になり、好ましい風味になりやすいことから、水中油型乳化組成物中の油脂の50質量%以上含むことが好ましく、70質量%以上含むことがさらに好ましく、90質量%以上含むことが最も好ましい。

水中油型乳化組成物に含まれる油脂の構成脂肪酸中の飽和脂肪酸の含有量は、風味が良好であることおよび長期保管した際の風味劣化が低減されることから、80質量%以上が好ましく、90質量%以上がさらに好ましく、95質量%以上が最も好ましい。その上限は、100質量%である。
本実施形態の水中油型乳化組成物中の油脂の20℃におけるSFC(固体脂含有量)は、飲料に添加した際の飲み口が優れることから30質量%以上であることが好ましく、40質量%以上がさらに好ましい。一方、通常60質量%以下であり、好ましくは55質量%以下である。
本実施形態の水中油型乳化組成物中の油脂の上昇融点は風味が良好であることおよび長期保管した際の風味劣化が低減されることから、0℃以上であることが好ましく、10℃以上がより好ましく、15℃以上がさらに好ましい。上昇融点は、「社団法人日本油化学会 基準油脂分析試験法2.2.4.2(1996年)」の方法に準じて測定できる。
本実施形態の水中油型乳化組成物中の油脂の上昇融点は風味が良好であることおよび長期保管した際の風味劣化が低減されることから、0℃以上であることが好ましく、10℃以上がより好ましく、15℃以上がさらに好ましい。上昇融点は、「社団法人日本油化学会 基準油脂分析試験法2.2.4.2(1996年)」の方法に準じて測定できる。
<ショ糖脂肪酸エステル>
本発明で用いるショ糖脂肪酸エステルは、ショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%である。エンドウ豆タンパク質およびファバタンパク質は、通常乳タンパク質に比べて高分子量で親水性が低いため、ショ糖脂肪酸モノエステルの比率が上記範囲であるショ糖脂肪酸エステルを用いることで、これらのタンパク質を油水界面に配置させることができる。
ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率は、水中油型乳化組成物の流通安定性の観点から、全ショ糖脂肪酸エステルに対して9質量%以上が好ましく、15質量%以上がより好ましく、20質量%がさらに好ましく、25質量%が特に好ましい。一方で、45質量%以下が好ましく、42質量%以下がより好ましい。すなわち、9~45質量%が好ましく、15~45質量%がより好ましく、20~42質量%がさらに好ましく、25~42質量%が特に好ましい。ショ糖脂肪酸モノエステルの比率はテトラヒドロフラン(THF)などを溶離液としてGPC分析したときのクロマトグラムの面積比により求めることができる。また、ショ糖脂肪酸モノエステルの比率が既知である複数種のショ糖脂肪酸エステルを組み合わせて用いる場合、それらの配合割合から水中油型乳化組成物におけるショ糖脂肪酸モノエステルの比率を算出することができる。
本発明で用いるショ糖脂肪酸エステルは、ショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%である。エンドウ豆タンパク質およびファバタンパク質は、通常乳タンパク質に比べて高分子量で親水性が低いため、ショ糖脂肪酸モノエステルの比率が上記範囲であるショ糖脂肪酸エステルを用いることで、これらのタンパク質を油水界面に配置させることができる。
ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率は、水中油型乳化組成物の流通安定性の観点から、全ショ糖脂肪酸エステルに対して9質量%以上が好ましく、15質量%以上がより好ましく、20質量%がさらに好ましく、25質量%が特に好ましい。一方で、45質量%以下が好ましく、42質量%以下がより好ましい。すなわち、9~45質量%が好ましく、15~45質量%がより好ましく、20~42質量%がさらに好ましく、25~42質量%が特に好ましい。ショ糖脂肪酸モノエステルの比率はテトラヒドロフラン(THF)などを溶離液としてGPC分析したときのクロマトグラムの面積比により求めることができる。また、ショ糖脂肪酸モノエステルの比率が既知である複数種のショ糖脂肪酸エステルを組み合わせて用いる場合、それらの配合割合から水中油型乳化組成物におけるショ糖脂肪酸モノエステルの比率を算出することができる。
ショ糖脂肪酸エステルにおける脂肪酸由来の構造単位は、パルミチン酸、ステアリン酸、オレイン酸などの公知の脂肪酸が用いられる。ショ糖脂肪酸エステルの具体例としては、ショ糖パルミチン酸エステル、ショ糖ステアリン酸エステル、ショ糖ミリスチン酸エステル、ショ糖オレイン酸エステル等が挙げられる。これらのうち、水中油型乳化組成物の風味および安定性の観点からショ糖パルミチン酸エステル、ショ糖ステアリン酸エステルが好ましく、ショ糖ステアリン酸エステルが最も好ましい。
ショ糖脂肪酸エステルは、それ自体既知の食品用乳化剤であり、市販されているショ糖脂肪酸エステルを使用できる。例えば、「リョートーシュガーエステルS-1670」、「リョートーシュガーエステルS-1570」、「リョートーシュガーエステルP-1670」、「リョートーシュガーエステルM-1695」「リョートーシュガーエステルS-1170」、「リョートーシュガーエステルS-970」、「リョートーシュガーエステルS-770」、「リョートーシュガーエステルS-570」、「リョートーシュガーエステルS-370」、「リョートーシュガーエステルS-270」、「リョートーシュガーエステルL-595」、(以上、三菱ケミカル社製、商品名);「DKエステルSS」、「DKエステルF-160」、「DKエステルF-140」、「DKエステルF-110」(以上、第一工業製薬社製、商品名);等が挙げられる。本実施形態の水中油型乳化組成物には、ショ糖脂肪酸エステルは、ショ糖脂肪酸モノエステル比率が3~45質量%となる範囲であれば、これらが1種のみが含まれていてもよく、2種以上が含まれていてもよい。
また、ショ糖脂肪酸エステルとして、特許第5945756号公報に記載のように、マイクロ波を照射して製造した、モノエステルの選択率の高いショ糖脂肪酸エステルを用いてもよい。
本実施形態の水中油型乳化組成物におけるショ糖脂肪酸モノエステル比率が3~45質量%であるショ糖脂肪酸エステルの含有量は0.05質量%以上が好ましく、さらには0.1質量%以上であることが好ましく、0.4質量%以上であることがより好ましく、0.7質量%以上であることがさらに好ましく、1質量%以上であることが特に好ましい。一方で、本実施形態の水中油型乳化組成物におけるショ糖脂肪酸モノエステル比率が3~45質量%であるショ糖脂肪酸エステルの含有量は、5質量%以下であることが好ましく、4質量%以下であることがより好ましく、3質量%以下であることがさらに好ましい。ショ糖脂肪酸エステル含有量を上述の好ましい範囲にすることで、ショ糖脂肪酸エステルによる適正な流通時の安定性向上効果を得ることができ、水中油型乳化組成物の適正な風味が保たれる傾向がある。
<エンドウ豆タンパク質、ファバタンパク質>
本発明の水中油型乳化組成物または飲料に用いられるエンドウ豆タンパク質およびファバタンパク質は、エンドウ豆あるいはそら豆を原材料とし、各種加工食品や飲料に原料として使用されている公知の食品素材を指す。例えばエンドウ豆タンパク質の場合、エンドウ豆原料から、さらにタンパク質を抽出、分離、濃縮して調製されるものであり、一般には分離エンドウ豆タンパク質、濃縮エンドウ豆タンパク質あるいはそれらを種々加工したものなどが挙げられる。
これらのうち、水中油型乳化組成物の流通安定性の観点から、エンドウ豆タンパク質を用いることが好ましい。
ただし、水とタンパク質を混合して混合液を作製する工程、および当該混合液を60℃以上200℃以下にて、1秒以上120分以下加熱処理する工程を含む製造方法により製造されたタンパク質粒子を除くことが好ましい。
本発明の水中油型乳化組成物または飲料に用いられるエンドウ豆タンパク質およびファバタンパク質は、エンドウ豆あるいはそら豆を原材料とし、各種加工食品や飲料に原料として使用されている公知の食品素材を指す。例えばエンドウ豆タンパク質の場合、エンドウ豆原料から、さらにタンパク質を抽出、分離、濃縮して調製されるものであり、一般には分離エンドウ豆タンパク質、濃縮エンドウ豆タンパク質あるいはそれらを種々加工したものなどが挙げられる。
これらのうち、水中油型乳化組成物の流通安定性の観点から、エンドウ豆タンパク質を用いることが好ましい。
ただし、水とタンパク質を混合して混合液を作製する工程、および当該混合液を60℃以上200℃以下にて、1秒以上120分以下加熱処理する工程を含む製造方法により製造されたタンパク質粒子を除くことが好ましい。
エンドウ豆タンパク質、ファバタンパク質は、水中油型乳化組成物の流通安定性の観点から、0.05質量%以上含むことが好ましく、0.1質量%以上含むことがさらに好ましく、0.15質量%以上含むことが最も好ましい。一方で、水中油型乳化組成物の粘度を適正に保つ観点から、3質量%以下であることが好ましく、2質量%以下であることがより好ましく、1質量%以下であることがさらに好ましく、0.6質量%以下であることが特に好ましく、0.45質量%以下であることが最も好ましい。
本実施形態の水中油型乳化組成物には、これらのタンパク質の1種のみが含まれていてもよく、2種以上が含まれていてもよい。2種以上が含まれる場合、上記の含有量は上記の例示物を単独で用いた場合の範囲であってもよく、複数を組み合わせて用いた場合の総量の範囲であってもよい。
本実施形態の水中油型乳化組成物には、これらのタンパク質の1種のみが含まれていてもよく、2種以上が含まれていてもよい。2種以上が含まれる場合、上記の含有量は上記の例示物を単独で用いた場合の範囲であってもよく、複数を組み合わせて用いた場合の総量の範囲であってもよい。
なお、水中油型乳化組成物のエンドウ豆タンパク質および/またはファバタンパク質の含有量は、水中油型乳化組成物中のタンパク質含有成分の中のタンパク質割合と当該成分の含有率から、計算により求めることができる。
本実施形態の水中油型乳化組成物のエンドウ豆タンパク質とファバタンパク質の合計量1質量部に対する、ショ糖脂肪酸エステルの量は、1~30質量部である。本実施形態の水中油型乳化組成物は流通安定性の観点から、エンドウ豆タンパク質とファバタンパク質の合計量1質量部に対する、ショ糖脂肪酸エステルの量は、1.37質量部以上が好ましく、3質量部以上がより好ましく、3.3質量部以上がさらに好ましい。一方で、20質量部以下が好ましく、15質量部以下がより好ましく、10質量部以下がさらに好ましい。すなわち、1.37~20質量部であることが好ましく、3~15質量部であることがより好ましく、3.3~10質量部であることがさらに好ましい。エンドウ豆タンパク質およびファバタンパク質等の植物性タンパク質は水中で凝集しやすいが、ショ糖脂肪酸エステルの量をこれらのタンパク質の量以上にすることで、凝集を防止しやすくなる。
本実施形態の水中油型乳化組成物は環境負荷やアレルギーの観点から、実質的に乳タンパク質を含有しないことが好ましい。具体的には、乳タンパク質の含有量が0.5質量%以下であることが好ましく、0.01質量%以下であることがより好ましく、乳タンパク質を含有しないことが最も好ましい。
本実施形態の水中油型乳化組成物における油脂相のメジアン径は、レーザ回析/散乱式粒子径分布測定装置(HORIBA社製)を用いて行った測定値にて0.2μm以上が好ましく、0.5μm以上がより好ましく、0.8μm以上が特に好ましい。一方で、3μm以下が好ましく、2.5μmがより好ましく、1.8μmが特に好ましい。すなわち、好ましくは0.2~3μm、さらに好ましくは0.5~2.5μm、特に好ましくは0.8~1.8μmである。
本実施形態の水中油型乳化組成物は、クリーマーとしてコーヒー、コーヒー飲料、コーヒー入り清涼飲料、茶飲料、ココア飲料、コーンスープ、乳飲料、アーモンド飲料、オーツ飲料、ココナッツ飲料、ライスミルク、カシューナッツミルク、ヘンプミルク、ピーミルク、クルミ飲料、豆乳、ピスタチオミルク、大麦ミルク、マカダミアミルク、果汁飲料等に使用することが可能である。
本実施形態の水中油型乳化組成物は、風味の観点から、コーヒー、コーヒー飲料、コーヒー入り清涼飲料、茶飲料、ココア飲料、アーモンド飲料、オーツ飲料、ピーミルクに使用することが好ましく、コーヒー飲料、茶飲料、アーモンド飲料、オーツ飲料に用いることが特に好ましく、コーヒー飲料に用いることがさらに好ましい。
本実施形態の水中油型乳化組成物は、風味の観点から、コーヒー、コーヒー飲料、コーヒー入り清涼飲料、茶飲料、ココア飲料、アーモンド飲料、オーツ飲料、ピーミルクに使用することが好ましく、コーヒー飲料、茶飲料、アーモンド飲料、オーツ飲料に用いることが特に好ましく、コーヒー飲料に用いることがさらに好ましい。
<その他の配合剤>
本実施形態の水中油型乳化組成物には、ショ糖脂肪酸エステル以外の乳化剤、乳成分、エンドウ豆タンパク質およびファバタンパク質以外の植物素材、安定剤、pH調整剤等のその他の配合剤を適宜配合することができる。水中油型乳化組成物に対するこれらの配合剤の含有量は通常0~5質量%であり、好ましくは0~3質量%である。
本実施形態の水中油型乳化組成物には、ショ糖脂肪酸エステル以外の乳化剤、乳成分、エンドウ豆タンパク質およびファバタンパク質以外の植物素材、安定剤、pH調整剤等のその他の配合剤を適宜配合することができる。水中油型乳化組成物に対するこれらの配合剤の含有量は通常0~5質量%であり、好ましくは0~3質量%である。
(ショ糖脂肪酸エステル以外の乳化剤)
本実施形態の水中油型乳化組成物は、長期保管時の乳化安定性等の観点から、ショ糖脂肪酸エステルに加え、食品用乳化剤を含むものであってもよい。本発明における食品用乳化剤は、食品に使用可能な乳化剤であれば特に限定されるものではなく、奏される本発明の作用効果を考慮して、適切なものを選択することができる。食品用乳化剤としては、例えばグリセリン脂肪酸エステル(モノグリセリド、有機酸モノグリセリド、ポリグリセリン脂肪酸エステル等)、ポリソルベート(ポリオキシエチレンソルビタン脂肪酸エステル)、ソルビタン脂肪酸エステル、プロピレングリコール脂肪酸エステル、ステアロイル乳酸塩(ステアロイル乳酸ナトリウム、ステアロイル乳酸カルシウム等)、酵素分解レシチン、レシチンなどの脂肪酸エステル類;サポニンなどが挙げられる。これらの食品用乳化剤は、いずれか1種を単独で用いてもよく、2種以上を併用してもよい。
長期保管時の乳化安定性の観点から、好ましくはグリセリン脂肪酸エステルであり、さらに好ましくはモノグリセリド、有機酸モノグリセリド、ポリグリセリン脂肪酸エステルのいずれか1種または2種以上を併用することが好ましく、さらに好ましくは有機酸モノグリセリドを用いることが好ましい。
水中油型乳化組成物がショ糖脂肪酸エステル以外の乳化剤を含む場合、その含有量は水中油型乳化組成物の0.01質量%以上が好ましく、0.05質量%がより好ましく、0.08質量%以上がさらに好ましい。一方で、2質量%以下が好ましく、1質量%以下がより好ましく、0.5質量%以下がさらに好ましい。すなわち、0.01~2質量%が好ましく、0.05~1質量%がより好ましく、0.08~0.5質量%がさらに好ましい。
本実施形態の水中油型乳化組成物は、長期保管時の乳化安定性等の観点から、ショ糖脂肪酸エステルに加え、食品用乳化剤を含むものであってもよい。本発明における食品用乳化剤は、食品に使用可能な乳化剤であれば特に限定されるものではなく、奏される本発明の作用効果を考慮して、適切なものを選択することができる。食品用乳化剤としては、例えばグリセリン脂肪酸エステル(モノグリセリド、有機酸モノグリセリド、ポリグリセリン脂肪酸エステル等)、ポリソルベート(ポリオキシエチレンソルビタン脂肪酸エステル)、ソルビタン脂肪酸エステル、プロピレングリコール脂肪酸エステル、ステアロイル乳酸塩(ステアロイル乳酸ナトリウム、ステアロイル乳酸カルシウム等)、酵素分解レシチン、レシチンなどの脂肪酸エステル類;サポニンなどが挙げられる。これらの食品用乳化剤は、いずれか1種を単独で用いてもよく、2種以上を併用してもよい。
長期保管時の乳化安定性の観点から、好ましくはグリセリン脂肪酸エステルであり、さらに好ましくはモノグリセリド、有機酸モノグリセリド、ポリグリセリン脂肪酸エステルのいずれか1種または2種以上を併用することが好ましく、さらに好ましくは有機酸モノグリセリドを用いることが好ましい。
水中油型乳化組成物がショ糖脂肪酸エステル以外の乳化剤を含む場合、その含有量は水中油型乳化組成物の0.01質量%以上が好ましく、0.05質量%がより好ましく、0.08質量%以上がさらに好ましい。一方で、2質量%以下が好ましく、1質量%以下がより好ましく、0.5質量%以下がさらに好ましい。すなわち、0.01~2質量%が好ましく、0.05~1質量%がより好ましく、0.08~0.5質量%がさらに好ましい。
(乳成分)
本実施形態の水中油型乳化組成物に含まれ得る乳成分としては、乳、全脂乳、脱脂乳、濃縮乳、脱脂濃縮乳、練乳、脱脂練乳、全脂粉乳、脱脂粉乳、生クリーム、バター、バターオイル、バターミルク、バターミルクパウダー、カゼインおよびカゼイン塩、ホエー、チーズ、乳清ミネラルなどの乳成分が挙げられる。
本実施形態の水中油型乳化組成物において、原料を生産する際の水分使用量が少なくなり、環境への負荷が低減される観点から乳成分を0~0.5質量%含有することが好ましい。さらに、乳代替物を提供するという観点では、乳成分を含有しないことがより好ましい。
本実施形態の水中油型乳化組成物に含まれ得る乳成分としては、乳、全脂乳、脱脂乳、濃縮乳、脱脂濃縮乳、練乳、脱脂練乳、全脂粉乳、脱脂粉乳、生クリーム、バター、バターオイル、バターミルク、バターミルクパウダー、カゼインおよびカゼイン塩、ホエー、チーズ、乳清ミネラルなどの乳成分が挙げられる。

(エンドウ豆タンパク質およびファバタンパク質以外の植物素材)
本実施形態の水中油型乳化組成物は、エンドウ豆タンパク質およびファバタンパク質以外の植物素材を含んでもよい。エンドウ豆タンパク質およびファバタンパク質以外の植物素材としては、大豆、アーモンド、オーツ麦、玄米、ヘンプおよびそれらの加工品が挙げられる。
本実施形態の水中油型乳化組成物において、原料を生産する際の水分使用量が少なくなり、環境への負荷が低減される観点から大豆およびアーモンドならびにこれらの加工品を0~0.5質量%含有することが好ましい。さらに、大豆製品代替物を提供するという観点では、大豆およびアーモンドならびにこれらの加工品を含有しないことが好ましい。
本実施形態の水中油型乳化組成物は、エンドウ豆タンパク質およびファバタンパク質以外の植物素材を含んでもよい。エンドウ豆タンパク質およびファバタンパク質以外の植物素材としては、大豆、アーモンド、オーツ麦、玄米、ヘンプおよびそれらの加工品が挙げられる。
本実施形態の水中油型乳化組成物において、原料を生産する際の水分使用量が少なくなり、環境への負荷が低減される観点から大豆およびアーモンドならびにこれらの加工品を0~0.5質量%含有することが好ましい。さらに、大豆製品代替物を提供するという観点では、大豆およびアーモンドならびにこれらの加工品を含有しないことが好ましい。
(安定剤)
本実施形態の水中油型乳化組成物は、安定剤を含んでもよい。安定剤としては、カラギーナン、キサンタンガム、グァーガム、タラガム、タマリンドシードガム、サイリウムシードガム、ペクチン、ローカストビンガム、カードラン、微結晶セルロースが挙げられる。
本実施形態の水中油型乳化組成物は、安定剤を含んでもよい。安定剤としては、カラギーナン、キサンタンガム、グァーガム、タラガム、タマリンドシードガム、サイリウムシードガム、ペクチン、ローカストビンガム、カードラン、微結晶セルロースが挙げられる。
(pH調整剤)
本実施形態の水中油型乳化組成物は、有機酸およびその塩、重曹、リン酸塩等のpH調整剤を含んでもよい。
水中油型乳化組成物がpH調整剤を含む場合、その含有量は水中油型乳化組成物の0.001質量%以上が好ましく、0.005質量%以上がより好ましく、0.01質量%以上がさらに好ましい。一方で、0.3質量%以下が好ましく、0.2質量%以下がより好ましく、0.1質量%以下がさらに好ましい。すなわち、0.001~0.3質量%が好ましく、0.005~0.2質量%がより好ましく、0.01~0.1質量%がさらに好ましい。
本実施形態の水中油型乳化組成物は、有機酸およびその塩、重曹、リン酸塩等のpH調整剤を含んでもよい。
水中油型乳化組成物がpH調整剤を含む場合、その含有量は水中油型乳化組成物の0.001質量%以上が好ましく、0.005質量%以上がより好ましく、0.01質量%以上がさらに好ましい。一方で、0.3質量%以下が好ましく、0.2質量%以下がより好ましく、0.1質量%以下がさらに好ましい。すなわち、0.001~0.3質量%が好ましく、0.005~0.2質量%がより好ましく、0.01~0.1質量%がさらに好ましい。
(その他)
その他の配合剤としては、上記で挙げたもののほか、糖類、糖アルコール、甘味料、香料、風味付け素材、ミネラル素材、栄養素材、酸化防止剤、保存料、酒類を含んでもよい。
糖類としては、砂糖、グラニュー糖、果糖、ブドウ糖、マルトース、ガラクトース、マンノース、フコース、キシロース、トレハロース、ラクトース、マンノオリゴ糖、マルトオリゴ糖等の単糖やオリゴ糖が挙げられる。
糖アルコールとしては、エリスリトール、キシリトール、マルチトール、ソルビトール、マンニトール、イノシトール等の糖アルコールが挙げられる。
甘味料としては、スクラロース、アスパルテーム、アセスルファムカリウム、ネオテーム、ステビア抽出物等が挙げられる。
その他の配合剤としては、上記で挙げたもののほか、糖類、糖アルコール、甘味料、香料、風味付け素材、ミネラル素材、栄養素材、酸化防止剤、保存料、酒類を含んでもよい。

栄養素材としては、ビタミンやコエンザイムQ10、アミノ酸、ペプチド、DHA、EPA等が挙げられる。
風味付け素材としては、β-カロテン、アスタキサンチン、リコピン、パプリカ色素などのカロテノイド、クロロフィル等の色素、食塩等が挙げられる。
ミネラル素材としては、カルシウム、鉄、マグネシウム、カリウムなどの塩が挙げられる。
栄養素材としては、ビタミンやコエンザイムQ10、アミノ酸、ペプチド、DHA、EPA等が挙げられる。
酸化防止剤としては、ビタミンC、ビタミンCナトリウム、ビタミンE、ローズマリー抽出物、茶抽出物、ヤマモモ抽出物等が挙げられる。
保存料としては、カラシ抽出物、リゾチーム等の日持向上剤、ナイシン、ソルビン酸およびその塩等が挙げられる。
酒類としては、リキュール、ウォッカ、焼酎等が挙げられる。

<飲料>
本発明の一実施形態に係る飲料は、上記水中油型乳化組成物すなわち水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルを含む水中油型乳化組成物であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%である水中油型乳化組成物を含有することを特徴とする。
また、本発明の一実施形態に係る飲料は、水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルとを含む飲料であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%であり、前記エンドウ豆タンパク質および前記ファバタンパク質の合計量1質量部に対する、前記ショ糖脂肪酸エステルの量が1~30質量部である、飲料であってよい。
本発明の一実施形態に係る飲料は、上記水中油型乳化組成物すなわち水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルを含む水中油型乳化組成物であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%である水中油型乳化組成物を含有することを特徴とする。
また、本発明の一実施形態に係る飲料は、水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルとを含む飲料であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%であり、前記エンドウ豆タンパク質および前記ファバタンパク質の合計量1質量部に対する、前記ショ糖脂肪酸エステルの量が1~30質量部である、飲料であってよい。
本実施形態の飲料は長期保管時の乳化安定性効果を十分に得る観点から、本発明の一実施形態に係る水中油型乳化組成物の含有量が0.2質量%以上であることが好ましく、0.8質量%以上がより好ましく、1.5質量%以上がさらに好ましい。また、一方で、42質量%以下が好ましく、30質量%以下がより好ましく、15質量%以下がさらに好ましく、10質量%以下が特に好ましく、5質量%以下が最も好ましい。
本実施形態の飲料は長期保管時の乳化安定性効果を十分に得る観点から油脂の含有量が0.1質量%以上であることが好ましく、0.3質量%以上がより好ましく、0.5質量%以上がさらに好ましい。また、一方で、15質量%以下が好ましく、10質量%以下がより好ましく、5質量%以下がさらに好ましく、3質量%以下が特に好ましく、2質量%以下であることが最も好ましい。
本実施形態の飲料は長期保管時の乳化安定性効果を十分に得る観点から、エンドウ豆タンパク質および/またはファバタンパク質を0.001質量%以上含むことが好ましく、0.002質量%以上含むことがより好ましく、0.003質量%以上含むことがさらに好ましい。一方で、エンドウ豆タンパク質、ファバタンパク質は、飲み口が良好になるという観点から、0.3質量%以下であることが好ましく、0.1質量%以下であることがより好ましく、0.07質量%以下であることがさらに好ましい。
なお、飲料の油脂並びにエンドウ豆タンパク質および/またはファバタンパク質の含有量は、飲料中のタンパク質含有成分の中のタンパク質割合と当該成分の含有率から、計算により求めることができる。
また、本実施形態の飲料には、本発明の一実施形態に係る水中油型乳化組成物由来以外のショ糖脂肪酸エステルを含んでいてもよい。かかる水中油型乳化組成物由来以外のショ糖脂肪酸エステルは、前記したショ糖脂肪酸エステルと同様のものを使用することが可能である。これらのうち、飲料の風味および安定性の観点からショ糖パルミチン酸エステル、ショ糖ステアリン酸エステルが好ましく、ショ糖パルミチン酸エステルが最も好ましい。
本実施形態の飲料におけるショ糖脂肪酸エステルの含有量は好ましくは0.001質量%以上であり、0.01質量%以上であることがより好ましく、0.03質量%以上であることがさらに好ましく、0.05質量%以上であることが特に好ましい。一方で本実施形態の飲料におけるショ糖脂肪酸エステルの含有量は3質量%以下であることが好ましく、1質量%以下であることがより好ましく、0.5質量%以下であることがさらに好ましく、0.3質量%以下であることが特に好ましく、0.2質量%以下であることが殊更に好ましく、0.15質量%以下であることが最も好ましい。本実施形態の飲料が、本発明の一実施形態に係る水中油型乳化組成物由来以外のショ糖脂肪酸エステルを含む場合、上記ショ糖脂肪酸エステル含有量は、当該ショ糖脂肪酸エステルおよび本発明の一実施形態に係る水中油型乳化組成物に含まれるショ糖脂肪酸エステルの総量とする。ショ糖脂肪酸エステル含有量を上述の好ましい範囲内にすることで、ショ糖脂肪酸エステルによる適正な長期保管時の乳化安定性効果を得ることができ、飲料の適正な風味が保たれる傾向がある。
本実施形態の飲料では、高温における製品品質の観点から、HLB10~17のショ糖脂肪酸エステルを含有することが好ましく、HLB13~17のショ糖脂肪酸エステルを含有することがより好ましく、HLB16のショ糖脂肪酸エステルを含有することがさらに好ましい。

本実施形態の飲料としては、例えば、コーヒー、コーヒー飲料、コーヒー入り清涼飲料、茶飲料、ココア飲料、コーンスープ、乳飲料、アーモンド飲料、オーツ飲料、ココナッツ飲料、ライスミルク、カシューナッツミルク、ヘンプミルク、ピーミルク、クルミ飲料、豆乳、ピスタチオミルク、大麦ミルク、マカダミアミルク、果汁飲料等を挙げることができる。
本実施形態の飲料は、風味の観点から、コーヒー、コーヒー飲料、コーヒー入り清涼飲料、茶飲料、ココア飲料、アーモンド飲料、オーツ飲料、ピーミルクであることが好ましく、コーヒー飲料、茶飲料、アーモンド飲料、オーツ飲料であることがさらに好ましく、コーヒー飲料であることが特に好ましい。
本実施形態の飲料は、風味の観点から、コーヒー、コーヒー飲料、コーヒー入り清涼飲料、茶飲料、ココア飲料、アーモンド飲料、オーツ飲料、ピーミルクであることが好ましく、コーヒー飲料、茶飲料、アーモンド飲料、オーツ飲料であることがさらに好ましく、コーヒー飲料であることが特に好ましい。
コーヒーまたはコーヒー飲料は通常コーヒー成分を含む。コーヒー成分としては、通常、コーヒー抽出液由来のコーヒー成分が用いられる。コーヒー抽出液を製造するためのコーヒー豆としては任意のものを用いることができ、例えばアラビカ種のブラジル、コロンビア、ペルー、キリマンジャロ等や、ロブスタ種のインドネシア、ウガンダ等があり、これらを単独で、または複数種混合して用いることができる。コーヒー豆の焙煎条件、粉砕条件、抽出条件なども任意に選択することができる。
コーヒー抽出液の配合量に特に制限はないが、通常、飲料中のコーヒー抽出液中の固形分の含有量として本実施形態の飲料の0.3~1.5質量%程度となるように用いられる。コーヒー抽出液中の固形分の含有量は、コーヒー抽出液のBrix値と同義とすることができる。
紅茶飲料における紅茶成分としては、紅茶葉を抽出して得られる液(紅茶葉抽出液)や、紅茶葉抽出液を濃縮して得られる濃縮液(紅茶葉濃縮液)や、紅茶葉抽出液を乾燥して得られる乾燥物(紅茶葉乾燥物)や、紅茶葉濃縮液を乾燥して得られる乾燥物(紅茶葉濃縮乾燥物)などを挙げることができる。
<水中油型乳化組成物の製造方法>
本発明の一実施形態に係る水中油型乳化組成物は、例えば以下のように製造される。

まず、植物油脂等の油脂含有成分やエンドウ豆タンパク質および/またはファバタンパク質、ショ糖脂肪酸エステル等の他、任意の配合剤成分を、必要に応じて水などと共に混合して混合液を調製する混合工程を行う。
次いで、得られた混合液を撹拌して乳化する乳化工程を行う。乳化方法としては、通常食品に用いられる均質乳化方法が使用可能である。例えば、ホモジナイザーを用いる方法や、コロイドミルを用いる方法、ホモミキサーを用いる方法が挙げられる。この均質乳化処理は、通常40~80℃の条件下で行われる。
上記乳化工程は1回のみ行っても、2回以上(複数回)を行ってもよい。
乳化工程を複数回行うとは、乳化機に被処理物を導入して所定の条件下で乳化処理した後、乳化処理物を取り出す操作を複数回行うことをさす。ここで、複数回の乳化処理に用いる乳化機は同一のものであってもよく、異なるものであってもよい。
本発明の一実施形態に係る水中油型乳化組成物の製造においては、乳化安定性の観点から、乳化工程を2回以上行うことが好ましい。
乳化工程を複数回行うとは、乳化機に被処理物を導入して所定の条件下で乳化処理した後、乳化処理物を取り出す操作を複数回行うことをさす。ここで、複数回の乳化処理に用いる乳化機は同一のものであってもよく、異なるものであってもよい。
本発明の一実施形態に係る水中油型乳化組成物の製造においては、乳化安定性の観点から、乳化工程を2回以上行うことが好ましい。
上記乳化処理は、工場で大量生産する場合は、より製造効率が高く、時間あたりの処理能力が大きい高圧乳化処理であることが好ましい。
高圧乳化処理は、例えば、狭い均質バルブの隙間や流路、ノズル等にポンプで送液することで高圧状態となった被処理物を、一気に圧力低下させ、その圧力差のエネルギーで流速を速め、高速で被処理物をバルブやリング、または、被処理物同士で衝突させることで、乱流、キャビテーションやせん断力を生じさせ、そのエネルギーにより、被処理物を細分化、乳化する処理である。
具体的に高圧乳化とは、1段式であればその高圧乳化時点の処理圧力が、2段式等の多段式であれば、少なくとも1段の高圧乳化時点の処理圧力が、好ましくは10MPa以上、より好ましくは15MPa以上、の状態で乳化することである。乳化処理の処理圧力は、高い程、油脂を十分に細かい微粒子として均一に乳化分散させることができることから好ましい。
乳化安定性の面において、処理圧力の上限については特に制限はないが、用いる乳化機の耐圧性や、工業的な実用化の面で通常200MPa以下である。処理圧力は、好ましくは100MPa以下、より好ましくは80MPa以下、さらに好ましくは50MPa以下、最も好ましくは45MPa以下であることが好ましい。
高圧乳化処理に用いる市販の乳化機としては、例えば、SPX社製 GAURIN 125T、132T、イズミフードマシナリー社製HV-5H、HV-5E等のバルブ式、吉田機械興業社製ナノヴェイダ、スギノマシン社製スターバースト100等のノズル式、パウレック社製マイクロフルイダイザー等のチャンバー式などが挙げられる。
高圧乳化処理における時間あたりの処理能力としては、通常0.1トン/時間以上、好ましくは1トン/時間以上、より好ましくは5トン/時間以上、最も好ましくは10トン/時間以上であり、このような処理能力とすることで、高圧乳化処理を、製造効率を低減することなく実施することができる。高圧乳化処理における時間あたりの処理能力の上限は特にないが、通常500トン/時間以下である。
また、各回の乳化処理時間は、処理量や処理圧力によっても異なるが、特に工場で大量生産する場合においては、生産性を損なうことなく、良好な乳化安定性を得る上で、通常0.005時間以上、好ましくは0.01時間以上、最も好ましくは0.1時間以上、通常20時間以下、好ましくは10時間以下、より好ましくは5時間以下、特に好ましくは2時間以下、最も好ましくは1時間以下である。
高圧乳化処理時の温度は、通常30℃以上、好ましくは40℃以上、より好ましくは50℃以上、通常100℃以下、好ましくは90℃以下、より好ましくは80℃以下である。処理温度が上記下限以上であることが、乳化効率の面で好ましく、また、乳化液の取り扱い性の面で、処理温度は上記上限以下であることが好ましい。この処理温度についても各回毎に異なっていてもよく、同一であってもよい。
また、乳化処理時の被処理物のpHについては、用いる乳化剤が水に充分分散し、効率良く油脂を乳化するという点から通常5.0以上、好ましくは5.0より大きく、より好ましくは5.2以上、更に好ましくは5.5以上、特に好ましくは6.0以上で、通常9.0以下、好ましくは8.0以下である。被処理物のpHは、被処理物に重曹、リン酸塩等のpH調整剤、その他の添加剤を添加することにより調整することができる。
水中油型乳化組成物の製造方法において、例えば、上記高圧乳化処理を行う乳化工程に先立ち、予備乳化工程を行うことが可能である。かかる工程は、パドルミキサー、ホモミキサー、超音波ホモジナイザー、コロイドミル、ニーダー、インラインミキサー、スタティックミキサー、オンレーター等を用いて行うことが可能である。
また、この予備乳化は、低圧または常圧条件で行うことが可能である。温度は通常30℃以上、好ましくは40℃以上、より好ましくは50℃以上、通常100℃以下、好ましくは90℃以下、より好ましくは80℃以下である。処理時間は通常0.005時間以上であり、好ましくは0.01時間以上であり、一方で、通常20時間以下であり、好ましくは10時間以下である。すなわち、処理時間は通常0.005~20時間、好ましくは0.01~10時間である。
また、この予備乳化は、低圧または常圧条件で行うことが可能である。温度は通常30℃以上、好ましくは40℃以上、より好ましくは50℃以上、通常100℃以下、好ましくは90℃以下、より好ましくは80℃以下である。処理時間は通常0.005時間以上であり、好ましくは0.01時間以上であり、一方で、通常20時間以下であり、好ましくは10時間以下である。すなわち、処理時間は通常0.005~20時間、好ましくは0.01~10時間である。
乳化工程後には、UHT殺菌、レトルト殺菌などの殺菌処理工程を行う。通常レトルト殺菌は、110~140℃、例えば121℃で、10~40分の条件で行われる。一方、PETボトル用飲料などに用いられるUHT殺菌は、より高温、例えば殺菌温度120~150℃で、且つ121℃での殺菌価(Fo)が10~50に相当する超高温殺菌である。UHT殺菌は飲料に直接水蒸気を吹き込むスチームインジェクション式や飲料を水蒸気中に噴射して加熱するスチームインフュージョン式などの直接加熱方式、プレートやチューブなど表面熱交換器を用いる間接加熱方式など公知の方法で行うことができ、例えばプレート式殺菌装置を用いることができる。
得られた乳化組成物は、缶、ビン、ペットボトル、紙パック、プラスチック容器等に充填することができる。これらの充填物は、流通に供することができる。
<飲料の製造方法>
本発明の一実施形態に係る飲料の製造方法は公知の方法が用いられる。例えば、上記にて得られた乳化組成物を他の飲料用材料に配合して混合する工程を有する。得られた混合物から、上記した乳化組成物における乳化工程および殺菌工程と同様の工程を経て本発明の一実施形態に係る飲料を得ることが可能である。
本発明の一実施形態に係る飲料の製造方法は公知の方法が用いられる。例えば、上記にて得られた乳化組成物を他の飲料用材料に配合して混合する工程を有する。得られた混合物から、上記した乳化組成物における乳化工程および殺菌工程と同様の工程を経て本発明の一実施形態に係る飲料を得ることが可能である。
なお、製造された飲料は、容器詰め飲料に好適であり、例えば、缶飲料、ペットボトル飲料、紙パック飲料、ビン詰飲料、プラスチック容器飲料などに適用することができる。
以下に、本発明を実施例によって更に具体的に説明するが、本発明はその要旨を超えない限り、以下の実施例の記載に限定されるものではない。なお、「%」とあるものは特記せぬ場合、質量基準であることを意味する。

表1に記載する成分を、表1に記載する含有量となるように加えて混合、溶解させ、さらに水を加え全量を100質量%とした。本液を70℃に昇温し、高圧ホモジナイザーにて25MPaの圧力で3回均質化後、85℃、10分間の殺菌を行い、水中油型乳化組成物を調製した。殺菌後の水中油型乳化組成物のpHは6.8~7.4であった。
表1に記載する成分を、表1に記載する含有量となるように加えて混合、溶解させ、さらに水を加え全量を100質量%とした。本液を70℃に昇温し、高圧ホモジナイザーにて25MPaの圧力で3回均質化後、85℃、10分間の殺菌を行い、水中油型乳化組成物を調製した。殺菌後の水中油型乳化組成物のpHは6.8~7.4であった。
得られた各水中油型乳化組成物について、以下の評価を行った結果を表2に示した。
また、得られた各水中油型乳化組成物中のショ糖脂肪酸エステルのショ糖脂肪酸モノエステル比率、エンドウ豆タンパク質またはファバタンパク質とショ糖脂肪酸エステルの含有比率(質量比)は表2に示す通りであった。

クリーミング・分離:各水中油型乳化組成物を5℃で4週間保管し、クリーミングおよび分離の発生状況を目視観察した。
良:クリーミングや分離が見られず、流動性が高い。
不良:クリーミングあるいは分離が見られる。
<メジアン径>
各水中油型乳化組成物を調製後、レーザ回析/散乱式粒子径分布測定装置(HORIBA社製)を用いてメジアン径測定を行った。

1:固化しており、品質上問題となる。
2:粘性が高く、品質上問題となる。
3:粘性があるが、品質上ほとんど問題ない。
4:やや粘性がある状態であるが、品質上問題ない。
5:流動性が高い状態であり、品質上問題ない。
各水中油型乳化組成物10gを直径3.5cmのプラスチック容器にとり、振盪機(MIX-EVR、TAITEC社製)を用いて10℃、2000rpmの条件で振盪した。振盪開始5時間後の水中油型乳化組成物の流動性を下記基準で評価した。
1:固化しており、品質上問題となる。
2:粘性が高く、品質上問題となる。
3:粘性があるが、品質上ほとんど問題ない。
4:やや粘性がある状態であるが、品質上問題ない。
5:流動性が高い状態であり、品質上問題ない。
[実施例9~12、比較例4]
コーヒー豆に10倍量の熱水を加えて抽出したコーヒー抽出液に、予め熱水で溶解した重曹を加えてpHを調整後、表3に記載する成分を、表3に記載する含有量となるように加えて混合、溶解させ、さらに水を加え全量を100質量%とした。本液を65℃に昇温し、高圧ホモジナイザーにて20MPaの圧力で均質化後、缶容器に充填、密封し、121℃、30分間のレトルト殺菌を行い、缶入りミルクコーヒーを調製した。殺菌後の飲料のpHは6.6~6.8であった。
コーヒー豆に10倍量の熱水を加えて抽出したコーヒー抽出液に、予め熱水で溶解した重曹を加えてpHを調整後、表3に記載する成分を、表3に記載する含有量となるように加えて混合、溶解させ、さらに水を加え全量を100質量%とした。本液を65℃に昇温し、高圧ホモジナイザーにて20MPaの圧力で均質化後、缶容器に充填、密封し、121℃、30分間のレトルト殺菌を行い、缶入りミルクコーヒーを調製した。殺菌後の飲料のpHは6.6~6.8であった。
得られた各飲料について、以下の評価を行った結果を表4に示した。

<飲料中での安定性、風味>
各缶入りミルクコーヒーを55℃で4週間保管し、その後、5℃で1晩静置した。翌日、缶を開けて内容液をカップに移した際の油粒の発生状況を目視観察して、安定性を下記基準で評価した。また、内容液のオフフレーバー(劣化等による異臭)の発生の有無を評価した。
1:クリーム筋、油粒が見られる。
2:クリーム筋、油粒が少し見られる。
3:クリーム筋、油粒がほとんど見られない。
<飲料中での安定性、風味>
各缶入りミルクコーヒーを55℃で4週間保管し、その後、5℃で1晩静置した。翌日、缶を開けて内容液をカップに移した際の油粒の発生状況を目視観察して、安定性を下記基準で評価した。また、内容液のオフフレーバー(劣化等による異臭)の発生の有無を評価した。
1:クリーム筋、油粒が見られる。
2:クリーム筋、油粒が少し見られる。
3:クリーム筋、油粒がほとんど見られない。
表2の結果から、水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルのショ糖脂肪酸モノエステル比率が3~45質量%であるショ糖脂肪酸エステルとを特定の割合で含有する乳化組成物はメジアン径がやや大きいにも関わらず、長期保管後であっても乳化安定性に優れ、流通安定性が高いことがわかる。
これに対し、エンドウ豆タンパク質およびファバタンパク質を含有しない比較例1、6や、ショ糖脂肪酸エステルのショ糖脂肪酸モノエステル比率が45質量%を超える比較例2、ショ糖脂肪酸エステルのショ糖脂肪酸モノエステル比率が3質量%未満である比較例3、エンドウ豆タンパク質およびファバタンパク質の合計量1質量部に対する、ショ糖脂肪酸エステルの量が1未満である比較例5は、流通安定性に改善の余地がある。
これに対し、エンドウ豆タンパク質およびファバタンパク質を含有しない比較例1、6や、ショ糖脂肪酸エステルのショ糖脂肪酸モノエステル比率が45質量%を超える比較例2、ショ糖脂肪酸エステルのショ糖脂肪酸モノエステル比率が3質量%未満である比較例3、エンドウ豆タンパク質およびファバタンパク質の合計量1質量部に対する、ショ糖脂肪酸エステルの量が1未満である比較例5は、流通安定性に改善の余地がある。
表4の結果から、水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸モノエステル比率が3~45質量%であるショ糖脂肪酸エステルとを含有する乳化組成物を特定の割合で含む飲料は、高温での安定性が高いことがわかる。
これに対し、ショ糖脂肪酸モノエステル比率が0質量%であるショ糖脂肪酸エステルを含有する乳化組成物を含む比較例4は、高温での安定性に改善の余地がある。

- 水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルとを含む水中油型乳化組成物であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%であり、前記エンドウ豆タンパク質および前記ファバタンパク質の合計量1質量部に対する、前記ショ糖脂肪酸エステルの量が1~30質量部である、水中油型乳化組成物。
- 乳タンパク質の含有量が0.5質量%以下である、請求項1に記載の水中油型乳化組成物。
- 乳タンパク質を含有しない、請求項1または2に記載の水中油型乳化組成物。
- 飲料用である、請求項1~3のいずれか1項に記載の水中油型乳化組成物。
- 前記油脂の構成脂肪酸中の飽和脂肪酸の含有量が80質量%以上である、請求項1~4のいずれか1項に記載の水中油型乳化組成物。
- 前記油脂の含有量が25~50質量%である、請求項1~5のいずれか1項に記載の水中油型乳化組成物。
- さらにグリセリン脂肪酸エステルを含む、請求項1~6のいずれか1項に記載の水中油型乳化組成物。
- 請求項1~7のいずれか1項に記載の水中油型乳化組成物を含む飲料。
- 請求項1~7のいずれか1項に記載の水中油型乳化組成物を0.2~42質量%含む飲料。
- 水と、油脂と、エンドウ豆タンパク質および/またはファバタンパク質と、ショ糖脂肪酸エステルとを含む飲料であって、前記ショ糖脂肪酸エステルに含まれるショ糖脂肪酸モノエステルの比率が全ショ糖脂肪酸エステルに対して3~45質量%であり、前記エンドウ豆タンパク質および前記ファバタンパク質の合計量1質量部に対する、前記ショ糖脂肪酸エステルの量が1~30質量部である、飲料。
