Abstract

La présente invention concerne la souche de Lactobacillus helveticus VF45A déposée à la CNCM sous le numéro d'ordre CNCM-l-5300, ses mutants et variants présentant au moins 80% d'identité, de préférence au moins 90% d'identité, de préférence au moins 95% d'identité avec le génome de ladite souche VF45A et capables de produire au moins un peptide correspondant aux séquences SEQ ID 1 à SEQ ID NO 43 et/ou capables de réduire par fermentation anaérobie le pH du lait, notamment de vache et notamment le lait de vache écrémé à une valeur sensiblement égale ou inférieure à 3,36, notamment égale à 3,32 au bout de 48 heures de fermentation à 37°C. La présente invention concerne également des peptides isolés pouvant être obtenu par fermentation du lait, notamment de vache par la souche précitée. La présente invention concerne également la souche de Lactobacillus helveticus VFH049 déposée à la CNCM sous le numéro d'ordre CNCM-l-5403 et ses mutants et variants présentant au moins 80% d'identité, de préférence au moins 90% d'identité, de préférence au moins 95% d'identité avec le génome de ladite souche VFHD49 et capables de produire au moins un peptide correspondant aux séquences SEQ ID 44 à SEQ ID NO 86 et/ou capables d'augmenter l'absorption intestinale du calcium. La présente invention concerne également un peptide isolé, un mélange de peptides et des produits et composition associés et la souche de Lactobacillus delbrueckii ssp. bulgaricus VF50b déposée à la CNCM sous le numéro d'ordre CNCM-l-5316 et ses mutants et variants présentant au moins 80% d'identité, de préférence au moins 90% d'identité, de préférence au moins 95% d'identité avec le génome de ladite souche VF50b et capables de produire au moins un peptide correspondant aux séquences SEQ ID 87 à SEQ ID NO 199 et/ou capables d'augmenter l'absorption intestinale du calcium. La présente invention concerne également un peptide isolé, un mélange de peptides et des compositions pharmaceutique et alimentaire associées.
