Abstract

L'invention concerne un ensemble de couteaux rotatifs pour équipements de panification, relevant du domaine des équipements pour la production de pâtes alimentaires en général, dont l'état de la technique fait intervenir un ensemble de couteaux de coupe et de séparation de volumes spécifiques de pâtes alimentaires, pouvant être remplacé par un élément d'un autre modèle, voire pour le nettoyage ou l'entretien, ledit ensemble de couteaux présenté pouvant être changé par simple accouplement rapide dans des manchons à roulements planétaires, sans aucun outil. Plus précisément, la présente demande de brevet concerne un ensemble de couteaux annulaires (2) constitués intégralement de polyacétal (POM), montés de manière espacée sur un axe de rotation (3), de manière à former respectivement un, deux ou plusieurs canaux (4), chaque vide étant doté d'un espèce de guillotine fixe (5) avec fixation sur des blocs (6) intercalés et opposés (7). Le dispositif de support (19) est constitué par deux disques de bride (10). Pour cet accouplement, l'un d'eux est doté d'un orifice traversant (11), l'autre présentant une saillie cylindrique avec fente transversale (12), formant une partie d'emboîtement femelle. Au voisinage de ces éléments se trouvent, en équidistance, deux roulements (13) fixes et un roulement mobile (16) situé à l'extrémité d'une barre basculante (14).
