La Chía ha sido usada como fuente de Iones para hidratación en US Patent No. 20130045297 "Formulación y métodos de uso de los mismos para tratar la deshidratación electrolito." El autor Philip Knight muestra formulaciones y métodos de uso de los mismos para tratar o prevenir la deshidratación. DESCRIPCION DETALLADA DE LA INVENCIÓN DETAILED DESCRIPTION OF THE INVENTION
La presente, tiene como objetivo la formulación de una bebida tipo horchata adicionada con mucílago de semilla de chía para el incremento de la calidad nutricional y estabilidad de la bebida. En la figura 1 se muestra el diagrama de operación para el diseño y formulación de la bebida. La bebida tipo horchata fue preparada a partir de un filtrado de arroz que se elabora seleccionando el tipo de arroz por su color, tamaño y peso, después se lleva a una etapa de acondicionamiento la cual dura 2 horas, una vez transcurrido el tiempo se pasa a un proceso de sanitacion y finalmente a la molienda y tamizaje. Este filtrado de arroz en mezclado con una preparación de leche de soya en base a un concentrado en polvo de leche de soya. Paralelamente, se extrajo mucílago de semilla de chía a partir de las siguientes condiciones de hidratación, semilla agua 1 :20 p/v y 23°C durante 60 minutos, las cuales, mostraron mejor rendimiento en la extracción de mucílago. Adicionalmente, el mucílago fue secado durante 150 minutos y 78°C para su posterior tamizado y adición a la bebida de horchata. El mucílago de semilla de chía fue adicionado a la bebida tipo horchata en diferentes proporciones de mucilago-espesante donde la mezcla de emulsificantes y estabilizadores naturales incluye al menos dos de los siguientes compuestos: maltodextrina, carboximetilcelulosa de sodio, goma guar, pectina y goma xantan. Se observó un efecto tras la adición de mucílago encontrando la reducción de la compactación del sedimento e incremento de la viscosidad de la bebida a partir de un 50% de mucílago adicionado. A la formulación anterior se agrega ácido ascórbico o cítrico como acidulantes; vainilla y canela en polvo y/o los siguientes ingredientes: almendra, ajonjolí, semillas de melón, semillas de calabaza, coco, fresa como saborizantes; una mezcla de colorantes como, dióxido de titanio ,y/o FD&C Red #40, FD&C#3, FD&C Blue #1 , FD&C Blue #2, FD&C Yellow #5 y FD&C Yellow#6 ; y sorbato de potasio como conservador. Posteriormente, la formulación fue pasteurizada y envasada en una atmosfera modificada libre de oxígeno para su almacenamiento, una temperatura menor a 4 °C. Los ingredientes utilizados no mostraron modificación en la propiedades organolépticas y sensoriales, mostrando un alto nivel de aceptabilidad.
