Abstract

La presente invención trata de desarrollar un procedimiento y un producto que utilizando instalaciones básicas y comunmente empleadas y sin requerir una instalación especial para descongelación y fermentación, logra un producto de calidad óptima si que el consumidor pueda distinguir si el mismo es fresco o procede de un proceso de descongelamiento. Es asi que se consigue una masa de pan aplicable a la fabricación de medialunas, vigilantes y todo tipo de pan, con diversas formas y tamaños, y que posee cualidad de post-horneado totalmente favorables en cuanto a sabor, textura, aspecto, voluminosidad, las cuales no son alteradas después de su descongelado.
