Abstract
Die vorliegende Erfindung betrifft einen Behälter zum Lagern eines alkoholischen Getränks. Der Behälter besteht dabei aus Glas, Keramik, Ton oder ähnliche Materialien und wird als Flasche bezeichnet. Der Flaschenverschluss ist mit einem Holzstab verlängert so das die in der Flasche gelagerte Spirituose in der Flasche einer fortwährenden Reifung unterzogen wird Ferner betrifft die Erfindung ein Verfahren zur Reifung und/oder Veredelung eines alkoholischen Getränks.

Fortwährendes Reifeverfahren eines alkoholischen Getränks (Perpetua! maturing)
Die vorliegende Erfindung bezieht sich auf einen Behälter zur Lagerung und Reifung eines alkoholischen Getränks, insbesondere einer Spirituose nach dem Oberbegriff des Anspruch 1 Sowie auf ein Verfahren zum Verfeinern und zur Intensivierung des Reifeprozesses gemäss dem Oberbegriff des Anspruchs 7.
Durch Lagerung in einem Holzfass erhalten alkoholische Getränke besondere
Geschmacksnoten. Beispielsweise werden Spirituosen in Holzfässern ausgebaut, wobei im Holz vorhandene Geschmacksstoffe durch die Spirituosen aus dem Holz gelöst und in die Spirituosen übergehen.
Eine besondere Bedeutung spielt die Holzfasslagerung bei der Reifung von Whisky. In der Europäischen Union ist eine Reifung von mindestens drei Jahren im Holzfass nötig, damit der Alkohol die Bezeichnung„Whisky" tragen darf. Während dieses Reifeprozesses, nimmt der Alkohol die Geschmackstoffe aus dem Holz auf, welche diesem den charakteristischen Geschmack verleiht. Hierbei dringt der Alkohol mit den Jahren immer tiefer in das Holz ein und kann dabei immer unterschiedlichere Geschmacksnoten entwickeln, je nach Dauer und Art der Lagerung und der Imprägnierung des Holzes durch vorab gelagerte Spirituosen.
Nach der Lagerung im Holzfass wird der Whisky in Flaschen abgefüllt. Hier endet der Reifeprozess und die Geschmacksnoten der Fassreife bleiben auf dem Stand der Abfüllung.
Die Aufgabe der vorliegenden Erfindung liegt darin, den Reifeprozess, auch während der Flaschenlagerung fort zu setzen um so der Spirituose eine fortwährende Reife und
Aromaverbesserung zu ermöglichen. Darüber hinaus kann der Wert des Getränkes durch die längere Reifung von Jahr zu Jahr steigen.
Der erfindungsgemässe Behälter eignet sich zum Lagern von alkoholischen Getränken, insbesondere Spirituosen, und wird gewöhnlich als Flasche bezeichnet. Er kann aus Glas, Keramik, Kunststoff, Holz oder anderen Materialien bestehen. Das Behältnis wird mit einem Verschluss versehen welcher aus einem Verschluss dichtendem Material, vorzugsweise Kork oder synthetischer Kork, mit einem integrierten Holzstab einer vorgängig zur Lagerung benutzten Fassdaube verlängert wird. Im erfmdungsgemässen Behälter wird der Verschluss direkt mit der Spirituose in Kontakt gebracht so das eine fortwährende Reife stattfinden kann. Ebenso wie der Reifeprozess im Fass, kann so die Spirituose auf die Aromen des Holzes zugreifen und während der
Flaschenlagerung weitere Geschmacksnoten aufnehmen.
BESTÄTIGUNGSKOPIE
Als alkoholisches Getränk im Sinne der Anmeldung, wird eine Flüssigkeit verstanden, welche für den Verzehr hergestellt wird und einen Alkoholgehalt von mehr als 40 % aufweist. Der Begriff umfasst dabei Getränke, deren Alkoholgehalt durch Gärung und/oder Alkoholbrand/ Destillation hergestellt wurde. Besonders bevorzugt ist das alkoholische Getränk dabei ein Malzbrand. Durch Lagerung in einem erfmdungsgemässen Behälter lässt sich z.B. ein Whisky fortwährend reifen.
Claims
1. Behälter zum Lagern von alkoholischen Getränken, insbesondere Spirituosen,
bestehend aus Glas, Keramik, Ton oder ähnliche, dadurch gekennzeichnet das der Verschluss mit einem Holzzapfen verlängert ist wie z.B. in Abb. 1
2. Behälter nach Anspruch 1, dadurch gekennzeichnet, dass der Behälter eine Flasche ist, welche mit einem Verschluss versehen ist der mit einem integrierten Holzstab verlängert ist.
3. Verfahren zum Reifen eines alkoholischen Getränkes, insbesondere einer Spirituose, dadurch gekennzeichnet, dass das alkoholische Getränk in einem Behälter nach einem der Ansprüche 1 bis 2 gelagert wird.
