Abstract
본 발명은 상온에서 장시방법에 관한 것이다.간 저장이 가능한 항산화물질이 풍부한 발효주 및 이의 제조방법에 관한 것으로서, 상세하게는 생균이 살아 있는 발효주와 당액의 최적 비율의 혼합 및 추가 발효에 의해 항산화물질과 탄산가스가 다량으로 생성되고, 생성된 항산화물질과 탄산가스가 발효주를 구성하는 세포에 충진되어, 발효주의 산화(부패) 방지 및 신선도 저하를 억제시켜 상온에서 장시간 저장이 가능한 항산화물질이 풍부한 발효주 및 이의 제조방법에 관한 것이다.
