It is well known to one skilled in the art, that carrageenans are susceptible to degradation (depolymerisation) especially at pH at or below 3.6, if subjected to elevated temperatures for a long period.
- Preferred buffers are alkali citrates, alkali tartrates and alkali phosphates. If only a short heating at elevated temperatures is involved or if the fruit base naturally has a pH > 3.6, the addition of a buffer may not be necessary.
- the fruit preparation is prepared by pumping an easily pumpable thixotropic mixture with a soft texture with the soft texture being recovered after foaming as a spoonable foam.

Abstract
L'invention porte sur une préparation à base de fruit comprenant une base de fruit et/ou un concentré de fruit contenant des sucres initialement présents dans le fruit, du carraghénane iota dans une concentration de 0,3 à 3 % en poids de ladite composition à base de fruit, au moins un produit de sucre, ladite préparation à base de fruit étant exempte de gélatine, de dérivés de gélatine et de produits laitiers et ladite préparation à base de fruit étant aérée avec un foisonnement se situant dans la plage de 20 à 200 %, ayant une teneur en eau d'au moins 20 % en poids de ladite préparation à base de fruit et ayant une teneur en matières solides d'au moins 5 % en poids de ladite préparation à base de fruit ; sur un procédé de fabrication d'une préparation à base de fruit, le procédé comprenant les étapes consistant à se procurer : un mélange comprenant du carraghénane iota dans une concentration de 0,3 à 3 % en poids de la préparation à base de fruit, au moins un produit de sucre et une base de fruit et/ou un concentré de fruit contenant des sucres initialement présents dans le fruit facultativement conjointement avec l'eau ; et à aérer le mélange à un foisonnement de 20 à 200 %, ladite préparation à base de fruit étant exempte de gélatine, de dérivés de gélatine et de produits laitiers, ayant une teneur en eau d'au moins 20 % en poids de ladite préparation à base de fruit et ayant une teneur en matières solides d'au moins 5 % en poids de ladite préparation à base de fruit ; et sur l'utilisation du carraghénane iota comme agent de texturation dans les préparations à base de fruit, lesdites préparations à base de fruit comprenant une base de fruit et/ou un concentré de fruit contenant des sucres initialement présents dans le fruit et étant exemptes de gélatine, de dérivés de gélatine et de produits laitiers.
