But a constant whey circulation per section with an own pump facility per section is also possible if such is desired, for instance because of a high load of fines or fundamentally hygienic reasons.

This is of importance because such a liquid stream could break the curd column or could damage the curd column, which can lead to an undesired structure, consistency or even taste of the eventually formed cheese.
- the time between successive cleaning turns can thus be substantially longer without the bacteriological quality of especially the5 drained whey becoming too poor for normal marketing. Also, the duration of a cleaning turn may be shorter, since no masses of fines need to be removed and the overall bacteriological state of the installation at the start of cleaning is substantially better.
- the pump means of the whey circulation system so that the0 impact of the cleaning process is enhanced. It is noted that after the foregoing, various modifications will readily occur to those skilled in the art.

Abstract
L’invention concerne un appareil de fabrication de fromage, qui comprend au moins une colonne d’égouttage tubulaire verticale (1), destinée à recevoir le caillé de fromagerie, qui forme en fonctionnement une colonne de caillé (W) dans la colonne d’égouttage (2). Selon l’invention, ladite colonne d’égouttage comprend au moins une section perforée munie d’une enveloppe (23) qui entoure la section respective pour recueillir en fonctionnement le petit-lait qui sort de la colonne de caillé. Selon l’invention, chaque enveloppe qui entoure une section perforée est munie d’au moins un tuyau de déchargement du petit-lait et au moins une enveloppe est munie d’un système de circulation du petit-lait, qui comprend au moins un tuyau d’alimentation pour la circulation du petit-lait (24) raccordé à l’enveloppe et au moins un tuyau de déchargement pour la circulation du petit-lait raccordé à l’enveloppe, ainsi que des moyens de pompage (25) raccordés à ces tuyaux. Selon l’invention, des moyens de guidage du petit-lait (26) sont prévus au moins à l’opposé du tuyau d’alimentation pour la circulation du petit-lait dans l’enveloppe et empêchent la collision directe du petit-lait introduit par les moyens de pompage via le ou les tuyaux d’alimentation pour la circulation du petit-lait dans l’espace entre l’enveloppe et la section perforée, contre une partie de la paroi perforée de la section perforée et la colonne de caillé située derrière.
