Tour (4) de production de blocs de fromage possédant une colonne (5) comportant une partie supérieure imperforée (1) se rétrécissant coniquement depuis le sommet jusqu'à la base d'environ 5 %, une partie médiane perforée (2) se rétrécissant coniquement de façon similaire mais seulement d'environ 2 % et une partie inférieure (3) imperforée ne présentant qu'une conicité nominale. On peut appliquer une aspiration par l'orifice (12) afin d'introduire le caillé dans la tour. Dans un autre mode de réalisation, on peut appliquer une pression par l'orifice (12) afin de comprimer et de pousser vers le bas le pilier de caillé dans la colonne (5).
