  • This invention relates to a wine storage vessel and in particular one having properties which will serve to enhance the flavour of the wine being stored therein.
  • a difficulty that arises as a result of the requirement to expose the wine to oak during maturation relates to the cost of the wine casks that are required and the relatively short life of those casks. As result there is a relatively high turnover of the casks and the requirement to have such casks and to be able to regularly replace them requires considerable capital expenditure on behalf of a wine marker.
  • Another alternative means of effecting exposure of oak is to introduce oak chips into the wine during the maturation process.
  • a difficulty in regard to this option is the capacity to replicate results and thus ensure consistency of the qualities of the product being treated on each occasion.

  • the wine is introduced into the cask 11 having the treatment member supported within it and the shaft is caused to periodically rotate.
  • the period of time that the wine is exposed to the oak is determined by the desired characteristics required of the wine by the wine maker and the periodicity of the rotation of the support member is similarly determined.
  • the spacing between the pairs of support members and the spacing of the components within the cask is such that the normal operations that are required to be conducted in relation to the wine in the cask such as sampling and the like are able to be conducted without the support members and the slats interfering with such activities.
  • the first embodiment provides a treatment member whereby the function of exposing the wine to the oak is effected by the slats 19 which are supported from the radial arms 17 rather than have the cask provide the desired oak characteristics.
  • the nature of the exposure can be varied by varying the nature of the oak used as slats.
  • the degree of exposure can be varied by varying the period that the wine remains resident within the vessel and/or by varying the number of slats supported by the support member and/or by varying the number of times the support member is caused to rotate within the cask and/or the periodicity of such rotations.
  • the use of the first embodiment reduces the requirement to use oak casks and provides the wine maker with a number of parameters which can be readily varied according to the desired outcome.
  • the cask is in the form a cylindrical drum 11 which can be formed of a suitable metal/and or plastics material which has an end plate 21 which is removable form one end face 23 of the drum.
  • the drum In use the drum is to be supported such that its central axis is substantially horizontal.
  • the drum is associated with treatment member which is supported from the end palate where the treatment member comprises a support having a shaft 13 which is supported from the end plate to be substantially coaxial with the central axis of the drum.

  • the vat is provided with an inlet 31 and an outlet 33 whereby an immature wine is introduced into the vessel through the inlet 31 and is allowed to remain resident within the vessel for a period of time. On the completion of the desired exposure to the oak the wine is allowed to pass from the vat through the outlet 33 into another maturation vessel.
  • the drive may comprise a motorised drive provided on the exposed end 15 of the shaft.
  • the vessels can be located in a side by side relationship and the rotation of the shafts 13 can be effected jointly as desired through a chain or pulley drive.

Abstract
