Abstract
【課題】 充分な発酵性をもち、かつ、得られた酒母で発酵飲料を製造した場合に、香気成分のバランスの優れた発酵飲料を提供することのできる酒母を提供すること 【解決手段】 本発明は、酵母の培養方法に関し、特に、短期間に効率的に酵母を増殖させ、香味特性の優れた発酵飲料を製造し得る酒母を得る方法に関する。より具体的には、本発明は、細胞の短径:直径の比が1:3以上である異常酵母の発生率が培養終了時に酵母全体の20%以下となる培養条件下で酵母を培養する方法を提供する。
