Abstract

PURPOSE:To enable yeast culture at high temperature, to readily extract a cell component and to obtain yeast applicable to food industry of cell in cultivating yeast, by adding a lipid and an osmotic pressure adjuster to a medium. CONSTITUTION:In cultivating yeast, a lipid (preferably oleic acid) and/or an osmotic pressure adjuster (e.g. sorbitol) is added to a medium. Preferably the lipid is combined with the osmotic pressure adjuster and used. Saccharomyces cerevisiae is preferable as the yeast.
