Abstract

On vise à proposer une protéine enzyme qui permet de synthétiser un isomaltooligosaccharide à longue chaîne ayant un grand nombre de restes glucose et un procédé de fabrication d'un isomaltooligosaccharide à l'aide de celle-ci. L'invention porte sur une isomaltooligosaccharide synthase ayant des caractéristiques enzymatiques de : a) être produite par une bactérie du genre Bacillus ; b) ayant une activité d'extension de la chaîne α-1, 6-glucane d'un isomaltooligosaccharide ; et c) synthétiser un isomaltooligosaccharide ayant 5 à 12 restes glucose à partir d'un isomaltooligosaccharide ayant 3,4 ou 7 restes glucose. L'isomaltooligosaccharide synthase de l'invention permet de produire l'isomaltooligosaccharide ayant 5 à 12 restes glucose à un rendement de transfert extrêmement élevé de 90% ou plus, en pratique de plus de 99%.
