Abstract

【課題】菌体流出を防止し、アルコール原料と酵母の接触効率を向上させて、凝集沈殿性を有する酵母のアルコール生産能力を十分に生かすことが出来るアルコール連続生産方法を提供すること。 【解決手段】発酵槽にアルコール原料を供給してアルコール発酵を行う際に、発酵槽下方に液流を発生させてアルコールを生産するアルコール連続生産方法であって、界面が形成されている状態でアルコール発酵する、或いは発酵槽内のアルコール発酵液の上下方向の異なる位置で菌体濃度ｄ１と菌体濃度ｄ２を測定し、ｄ１とｄ２の比（ｄ２／ｄ１）が１．７以上６．６以下となるように液流を制御する、或いは、アルコール発酵液の上下方向の異なる位置で菌体濃度ｄ１と菌体濃度ｄ２と菌体濃度ｄ３を測定し、ｄ１とｄ２の比（ｄ２／ｄ１）が１．７以上であり、かつｄ１とｄ３の比（ｄ３／ｄ１）が７．６以下となるように液流を制御することを特徴とするアルコール連続生産方法。
