Abstract

L'invention porte sur une nouvelle α-galactosidase avec laquelle le raffinose peut être synthétisé de façon sélective. L'α-galactosidase présente la propriété de permettre de parvenir à une sélectivité vis-à-vis du raffinose de 65 % ou plus lorsque la condensation par déshydratation de saccharose et de galactose comme matières premières fournit des oligosaccharides ayant une teneur en raffinose de 0,5 % ou plus.
