Abstract

 本発明の目的は、選択的にラフィノースを合成することが可能な新規α-ガラクトシダーゼを提供することである。本発明によれば、スクロースとガラクトースを原料とした脱水縮合反応において、生成オリゴ糖中のラフィノース含有率が0.5%以上のとき、ラフィノース合成選択率が65%以上という性質を有するα-ガラクトシダーゼが提供される。
