Abstract

L'invention porte sur un procédé et un appareil pour faire de la pâte à partir de farines de qualité alimentaire alternatives, les étapes de fabrication suivantes étant effectuées de façon continue sans interruption : mélanger l'eau et la semoule ; faire cuire la pâte à la vapeur d'eau ; ramener à la température ambiante pour refroidir la pâte ; tremper la pâte obtenue au moyen d'un procédé sous vide ; faire passer la pâte dans une vis d'alimentation ; et comprimer par étirage sur bronze ou Téflon.
