Abstract
The invention relates to a method and a device for preparing natural products crystallised by sugar coating, such as flowers for example. The products (10) are first stabilised, immediately after being harvested, by being sprayed with a solution of arabic gum in (12) and dried under vacuum in (18), and are then coated in sugar by being sprayed in (36) with a solution saturated with sugar and granular sugar in (38), and hot-air dried in (40). The invention enables the form, aspect, colours and aromatic and gustatory qualities of the crystallised products to be well preserved.
