Abstract

Sugar icing or sweetmeat is applied to food such as nuts, biscuits or sweets by spraying the liquefied sugary mass through a nozzle over the articles in a revolving drum, coating drum or in a fluidized bed. The liquefied droplets are produced by blowing hot compressed air into a fused sugary mass, obtd. by boiling down, or by melting extremely fine sugary particles in a hot air stream in a fusion zone. This coats concave recesses in the food as well as plane and convex areas without redn. of quality. The new process can be applied by using conventional equipment. The process is suited for continuous or for intermittent batch production.
