Abstract

Die Erfindung betrifft ein neues Verfahren zur Herstellung von gegarten Lebensmitteln in der Verkaufspackung sowie Lebensmittelprodukte, die für die Garung in der Verkaufspackung geeignet sind. Durch Verwendung von Carrageen als Prozesshilfe kann anders als beim Stand der Technik von einer Vorgarung abgesehen und die Garung vollständig in der Verkaufspackung durchgeführt werden. Insbesondere gelingt es mit dem erfindungsgemäßen Verfahren, beispielsweise gut schüttbaren gegarten Reis herzustellen, der dementsprechend leicht aus der Verkaufspakkung entnommen werden kann.
